Aka eggplant salad. Filipino cuisine is hit and miss, and I was ready for this to go wrong lol. But it's awesome! That's a roasted eggplant below prawn paste, raw onion and raw tomato. All the simple ingredients came together so well. It's recommended to be paired with lechon to cut through the richness.

I was recommended here by a Filipino so that must mean something. The crackling skin was on the level of Chinese suckling pig, it's incredible. Many places can't get it right. The thick meat was roasted well, featuring a good bite and a nice balance of lean and fat. Yet, I left unsatisfied. Because although it's a very professional job, the lechon here was missing the grittiness of the streets. It lacked the X-factor I need in lechon - the gaminess.

Still my fav place when I crave for it,The pork tender with the amount of perfect fat and the skin still crispy (not as crispy as eating there though, but good enough for now).

The tamarind soup is very appetising & flavorful; balance out the greasiness of the pork dish; came with several big & fresh crunchy prawn..

The sizzling Lechon Sisig ($12.50) also pulls its weight with its chopped up lechon being caramelized on the hotplate mixed in with a raw egg. Be prepared to queue on weekends though as it is also a favourite dining spot for our Filipino friends.

@lechonrepublicsg serves up the best way to do pork and the best rendition I’ve had. Possibly heart attack inducing but a must try before die dish. Every piece of crackling was crisp while every slab of meat slathered with the accompanying gravy was enough to go down with 2 mouthfuls of rice.
