The Freshly Shucked Oysters were based on the daily supply of oysters that were brought into the restaurant. For S$6.00 each, enjoy them together with wedges of lemon, lager vinaigrette or tabasco.

The selections for this meal included oysters from local farms, France and New Zealand respectively. The New Zealand oysters had a slightly sweet aftertaste, whereas the French ones gave a slight crisp to their plump meat. But among them all, the local ones were the most satisfying. Coming from Ah Hua Kelong, these oysters were most balanced in terms of flavour and firmness.

And I was really appreciative of the waiter who was so enthusiastic to share his recommendations on the oysters. I would really suggest to check with the staff if one was not sure which are the ones to get, but most likely the local ones would be great to have.

They incorporate beer brewing elements even in their desserts. The spent grain crust was buttery and crumbly and the rich stout-infused ganache filling has strawberry jam that result in a refreshing and slight sour taste. It was good without being cloying 》$15

Thankful the the birthday celebration. The little gestures do make a difference. It would be perfect if there was no typo error (not the first time). Afterall, it's the thoughts that counts 🥳

Stout & lemongrass marinated, shiso, green goddess, fermented leek 》$36

Marinated with LeVeL33's stout and lemongrass, the pork jowl came with a smoky spiced flavour that was well complemented by the green goddess sauce.

Pan seared, beer malt risotto, dill, daikon 》$33

The seabass was pan seared with a crispy texture on the skin while the risotto is slightly different with the use of beer malt. It has a dry and husky texture which feels like some healthy grains. The sauce was creamy and slightly cheesy. Quite a nice dish but I got tired of chewing risotto after a while.

This plate of grilled squid was sous vide and grilled with a nice char and chewiness. Accompanied with black garlic aioli, 'ugly' sweet palermo pepper, tomatoes and basil. I don't usually take squid due to the allergic reaction but I decided to go with the waiter's recommendation and it was totally worth the try 》$22

Most dishes from LeVeL33 contain some beer elements. The complimentary sourdough is made with beer malt and served with yeast beer butter.
