The Ah Hua Kelong Seafood Bouillabaisse consists of local mussels, prawns,clams and fish delivered fresh every single day from Ah Hua Kelong.

The soup broth is flavourful, made from boiled fish bones, shellfish, prawns heads, clam meat, vegetables and white wine then blended together and strained,served with Fresh local seafood such as prawns, mussels and clams.

💰$9 for lunch (small portion) and $28++ for dinner (bigger portion).

I tried The French Duck Leg Confit.
French duck leg is marinated overnight and confit in duck
fat for 3 to 4 hours, until its really juicy and tender (i no need used knife to eat it), and Served with panfried watercress, smoked char yellow corn purée and sautéed white pearl corn then finished with Brandy jus.

From the mains, there is the Local Barramundi ($36) that is supplied by Kuhlbarra, a locally farmed fish supplier and Chef ArChan has utilized this quality piece to perfection by paying homage to our local grilled stingray dishes. The fish is first marinated in spices and aromatics such as turmeric, lemongrass, chilli and fish sauce before for 24 hours and wrapped in a banana leaf before being grilled. Served with a refreshing herb salad, this is one dish that you should not miss out on ordering when here.

Continuing with the local produce is the Ah Hua Kelong Seafond Bouillabaisse ($9) which comes with an umami soup broth that contains an assortment of seafood, vegetables, aromatics and white wine. The fresh local seafood such as prawns, mussels and clams that are sourced from Ah Hua Kelong are then added and cooked with the broth. To have a balanced meal, do not skip on vegetables and the must-order is the Grilled “Ugly” French Beans ($8) which are grilled and powdered with a spice mix of cumin and chilli salt, reminisce of those skewers you can order from Chinese eateries along Chinatown.

In this set lunch menu, diners are invited to the raw bar plated buffet appetizer selection as part of their entrée whereby there will be a rotational spread of pastas, vegetable salads, seafood and cold cuts.

Once you get your appetite going, you can choose from one of six main courses which we sampled the Classic Brewery Burger & Fries and French Duck Leg Confit (additional $3). For the former, the burger bun is made from a crispy beer malt artisanal brioche that is sandwiching a thick Wagyu beef patty with the accompanying condiments of chipotle mayonnaise, cheddar cheese, lettuce, caramelized onions and gherkins. If you are there hungry, this main course will surely fill you up by the end of the meal. The latter is probably one of the better duck confits I have tried as it is first marinated overnight with thyme and garlic before it gets confit in duck fat with cinnamon sticks and orange skin. The duck leg is served with pan-fried watercress, smoked corn puree and sautéed white peal corn with a drizzle of Brandy jus.

Once you have finished your main course, you can then head back to the raw bar for a selection of cheeses and fresh fruits to end a fulfilling meal.
