I'm always reminded of baby food when I have my Hainanese Curry Rice fix. Everything seems to be cooked to a delicious death - cabbage stewed to a mush, pork belly till jelly-tender.... With the exception of the breaded pork chop that's pulverised flat then deep fried to a crisp, it's safe to say the entire meal can be slurped up without any need for chewing. Important nutrients have probably been killed many times over in the course of preparation. But hey, can anyone resist this local comfort food when the urge comes calling?
