Sandwiched between homemade brioche, there’s avocado, creamy scrambled eggs, roasted tomatoes, homemade pesto and a generous shaving of grana padano cheese. It looks simple, but I loved how well the different elements came together so harmoniously. Jones’ homemade pesto especially, was fragrant and had a delicious punch. This breakfast dish is only served till 12pm daily.

I’m not at all a coffee person, but this collaboration flavour between Tom’s and Parchmen & Co had a well handled balance! I liked how they retained the natural bitterness of the tie guan yin and didn’t overwhelm it with sweetness. The white chocolate and hand ground coffee beans coated popcorns gave a contrast texture and flavour.

This anniversary flavour is available on 20th and 21st September, as part of Tom’s 14th Anniversary celebration - they’ll also be serving up other brand new flavours and returning fan favourites through the month. Thank you @tomspalettesg for having us and @burpple for the kind invite! ✨

A special collaboration flavour with Gong Cha - vanilla made with Madagascar vanilla beans, topped with oolong tea sauce and konnyaku rose jelly! The scoop was fragrant with a good amount of sweetness. Was fun to have with the chewy bits of konnyaku too.

We were super lucky to get to try the very limited batch of Mao Shan Wang that the Tom’s Palette crew worked really hard in making!! It was freshly churned to lock in as much of the durians’ natural flavour, and that really shone through the final product. Absolutely loved the richness and its creamy texture!

Interlude was this miso dashi soup that had hua diao wine added! It had a higher dashi to miso ratio and I loved its simplicity. Was a nice comforting bowl before the main course.

Course 2 was donburi with the option of chicken or seafood. Our seafood bowl came topped with fresh cubes of salmon, maguro, a little bit of crab and sides of mentaiko, tobiko, avocado, spring onions and furikake. We were told to mix it in but it might get a bit heavy, so try them separately first!

A one-bite appetiser to the start of our omakase! Taking the egg yolk’s place is a buah keluak shiitake filling, topped with tobiko and shiso leaf. It was earthy and savoury, a surprising combination that worked well.

Last dish we ordered for our meal and no regrets. Like what its name says, it was shiok! Handmade and lightly breaded, these prawn patties were seasoned and fried just nice, retaining the juiciness inside. Like @juliuslim said, these would work great as a burger patty!

Chef Joel’s Brandy White Fish Soup has that creaminess not because of added milk, but a result from hours of simmering. It was a comforting bowl with slices of fresh fish, cabbage and shimeiji mushroom. Due to its limited availability, it’s best to reserve a bowl before going down.

A nice plate of mango sticky rice except the rice was a tad too soft. Mangoes were sweet!

Leaning more to the fatty side, these slices of pork cheek were grilled to a light smokiness. Well-balanced with the tangy homemade sauce!
