4.5 munchies: Air-dried for 3 hours, smoked for an hour, then roasted for another 2 before deep frying the pork belly. The bubbled-up, puffy top layer says it all. This is what a great crackling is all about – super crispy and slightly charred skin with the meat being so tender and juicy!
4 munchies: A traditional Chinese-influenced Filipino starter, the Lumpiang Sariwa (vegetarian spring roll) consists of a fluffy egg crêpe filled with shredded turnip, carrot, green beans, and chickpeas. Served with a sweet and savoury sauce made from brown sugar, soy sauce, stock and garlic, it complemented the crisp, refreshing flavours of the greens and beans nicely. The crushed peanut garnishing also added crunch and gave the appetiser a piquant kick. What a great start to my discovery of Filipino cuisine!
