Still in its experimental stage, the fresh strawberries 🍓 and watermelon 🍉 cubes (compressed with choya and mint🍃 ) were lying on a pillowy bed of ricotta (steeped with maple syrup and rosebuds🌹 ) and waffles (infused with basil). Balsamic Honey 🍯 cream gave this ingenious creation its finishing touch.👌 Thank you Ying @chinesewinegal for letting us be the first to try your creation! I'll be waiting for the next iteration! Loved the plating so much! 😄

This is the Chocolat Noir ($12.80) made with a blend of 66% Dark Mexican Chocolate and 100% Dark French Chocolate, Almond Cream, Coco Bean Tuile, and the Chocolate Meringue to grant some relief to the bitterness of dark chocolate. It was absolutely impressive with the amount of thought and skill that went into crafting this perfect piece. Even the sides of the cake was handmade instead of using a mould to achieve a thinner crust. Such thoughtfulness! A chocolate lover's heaven! Also highly recommended is to do a tea pairing with the pastry. This goes really well with the Moroccan Mint Tea Blend served by them.

The host chose chicken over the usual duck to appeal to a wider audience. Nevertheless, the Chicken Confit is still cooked in duck fat to give it that more robust kick! 🙌🏼 The highlight of the dish must be the truffle potato foam. Unlike usual confit served on mash, this truffle potato foam was smooth, light and creamy!

A side note is that this amazing truffle potato cream is also served on their breakfast menu with croissant and eggs🍳! Will definitely be back to try that!
