It was light in flavour but very refreshing, thanks to the citrusy pickled pear. The pork jowl unquestionably showcased its smokiness and tenderness well. Definitely something that you can nibble on and on without feeling overwhelmed.

Labyrinth's Siew Yoke Umami Rice, as the name suggests, boasts its umami rice, that's mixed with nori. The pork belly was tender and possessed a beautiful crispy skin, though the fats didn't exactly "melt in the mouth".
