Must have been the 'regular' preference selected for the flavor strength, richness, garlic, and amount of red sauce. Mistake, the wow factor was lacking - it tasted like any ordinary tonkotsu ramen, bland but edible.
On the second visit more sober (you see, Ichiran is a place you visit at 4am, any other time do expect an hour-long queue), I decided to get my adrenaline pumped by indicating strong on every ramen preference. Result: a spicy, oily, creamy and sinful broth that packed a punch and every drop in that bowl secured a slot in my satisfied tummy. Now, I'm sold.

If I could add to its accolades, it would easily be the "best char siew in HK" award. The signature char siew came glistening with a juicy and melt-in-your-mouth layer of fats. Immaculately roasted with honey, every bite was succulent and tender - an explosion of divinity that my palate was happy to receive.
Dim sum was of high quality too, but do expect to pay doubly much. Introducing the modern Chinese burger (think kong bak pau) - melt in your mouth braised pork belly and shiso leek salad, bathed in a gorgeous sesame and ketchup dressing, and finally sandwiched between two fluffy soft buns. Result: a reflex thought asking why did I only order 1?

The noodles here are cooked al-dente, giving it the typical HK springy texture. The 'voluptuous' wontons are weighed for consistency and every bite sent hints of heavenly pork fat and shrimp.
