Another fabulous dish from newly opened Scottish restaurant, Usquba, this caramelised foie gras is served with sprightly bits of pickled apple and Spiced persimmon to lift up the rich dish. The Aberdeen Angus Beef used for this outstanding dish at newly opened Scottish restaurant, Usquba, is a winner! So tender, the fillet need no effort at all to slice through, perfectly charred and leading to a blushing pink, then a deeper red core, the meat is succulent and tasty.
