Century egg (pi dan, 皮蛋) is a traditional Chinese ingredients, where duck eggs are preserved with clay, ash and rice hulls resulting in a translucent egg white and alkaline tasting egg yolk. Chinese dumplings (jiao ji, 饺子) are usually made with a mixture of pork and prawn wrapped in dough.
The dumplings here are particularly interesting as they’re stuffed with chunks of century egg. The result is a dumpling which is rich and flavourful with the sweetness of the prawn and the umami from the century egg. Surprised that there isn’t more of this dish around.

Bak Kut Teh is a Malaysian Hokkien-Teochew dish consisting of pork, mushrooms and tofu puffs boiled in a Chinese herb broth with a pronounced garlic and soy flavour. The dish can consists of an assortment of pork cuts as well as offals such as intestines and stomach. The dish is usually served with a side of white or shallot oil rice, with fresh chopped garlic, Bird’s eye chilli and light and dark soy sauce.

The Bak Kut Teh here was served in a light broth with a generous helping of pork rib which fell off the bone. The dish was served with enoki mushroom and lettuce, and since Long Beach is a Japanese establishment, came with cabbage and a Japanese soft boiled egg. Very flavourful. Yee Sang is a dish that is served in Malaysia and Singapore during the Chinese New Year, consisting of shredded pickled vegetables, carrots, jicama, pomelo, orange and lemon rinds, crushed peanuts, crackers, spices, raw salmon and drizzled with sweet plum sauce.
The Yee Sang here was arranged into the shape of the rooster to signify the year of the fire rooster, and is served with raw tuna. The sauces were sweet and savoury and the portions were allocated well, you got to taste a bit of everything.
