Burgers
I had no idea South Union Park makes every part of their burger in-house, yes, even the buns! This was something I learned over a conversation I had with Chef Terence after the dinner crowd had cleared last Sunday. He shared with us the great lengths he and his team had gone through to in order to create their ideal cheeseburger. There were even photos on his phone showing how they did side-by-side comparisons of different formulations for their beef patty.
Well, I really appreciated all the effort they put in because their cheeseburger was one of the more memorable ones I've eaten.
As big as the Whopper from Burger King, there is nothing superfluous about it, just basics done very well.
So there I was, sinking my teeth into light, pillowy buns that'd been toasted and buttered, and a really juicy, thick beef patty. To be honest, I've always been quite picky about the texture of patties but theirs suited me well - the ground meat wasn't bound too tightly or loose. The only other additions in the burger were melted aged cheddar and raspberry vinegar-cooked onions. Loved how the latter brought a subtle acidity that helped to cut the richness. Ditto the lightly-dressed lettuce served on the side.
Because of ardent foodies, @angelineongsuming and @happygreedyfoodie, I not only got introduced to the big bad beautiful world of burgers by PTT's Group Executive Chef Adam, but also had a sneak taste of his brand new "Watermelon Man".
Originally created for a magazine collab for Three Buns in Jakarta, this burger (which is named after a Herbie Hancock song) is a cannonball of strong yet remarkably balanced flavours .
Looking like it could pass off as a slice of beetroot, the watermelon had survived an intensive process to get to this point. Cured in sugar syrup and a bunch of other tasty things, and compressed to achieve a tight, smooth texture, it more than held its own against all 150gms of the UK Hereford Angus beef patty. Not to mention, it had to contend with the potent quadar de carva cheese, pickled onions, ketchup and housemade thousand island dressing as well. Like a championship match between great rivals, this battle of flavours demanded a worthy venue. The space between the light cushion halves of toasted brioche was it.
From around mid May, the "Watermelon Man" will be on the menu at Three Buns in Singapore.
Was not blown away by this :( first, the fried chicken wasn't juicy on the inside even though some parts were barely cooked. The salted egg yolk sauce was kinda watered down and didn't have that oomph. The batter for the fried chicken can also be improved to be tastier! Wouldn't recommend getting this.
Loved the juicy chunks of lobster on the buttery 'slow grilled' roll!! I was so pleasantly surprised by how generous they were with the lobster chunks too. And the sauce was creamy but not overwhelming!!
favourite things in life; burger, coffee and coconut water. at @montanasingapore, they mash-up the 2 liquids with chilled coffee in funnel over a coconut frozen sphere. game changer and refreshing af. #burpple
