It was a natural choice for me, pork, belly, fatty... lest was I expecting that there was no tinge of fattiness or greasiness in this dish, instead it was just so very savory (for a lack of a better word - giammmm)! The texture was unlike any other pork dish.

In contrast, this feels refined and highly calibrated. It's tender but not too fatty, skin is crispy though not overly roasted, meat is lightly salted just enough to lift your palate. It is accompanied by yellow mustard, kale, pork jus.

The other sio bak that I like would be perfect over beer to buddy with the bros, while this one I had it with white wine over conversations.

Rosemary smoked organic eggs. This is one silky creamy smokey savory goodness!
The pigeon dish was also really tender, moist and flavorful. Having had poorly executed pigeon dishes before, this definitely has redefined how pigeon meat should taste!
Pre dessert was a cucumber sorbet that was so refreshing. It definitely cleanses the palate to prepare for the dessert course.
