When you hear that curry is on the menu, what’s the first thing that comes to your mind, spicy and rich I guess. However there’s no curry powder and no chili in this. Only pure herbs and spices hand pounded and grind to a smooth paste. 🤤

The end result was a ‘curry’ that’s light, easy on the palate and surprisingly a tad sweet. It’s almost ‘fruity’ and one of the most unique curry dish I’ve had and it’s hard to forget. A bowl of rice and a humongous appetite is all you need. 🔖

It’s about turning off the mean, manipulative, calculating, and shrewd person inside you, and slipping heedlessly into a new experience as if it were a warm bath. It’s about shutting down the radar and letting good things happen. Let it happen to you. It happened to me at with this meal and this stir fried jumbo prawns with Chinese rose wine is just sublime. 🤤

ACAMASEATS & GTK💮: The complexity that Chef Ming gets out of his Local Braised Duck is inarguably delicious. The Stock, which is Braised for 3 days had a depth of flavour & intensity. It really showcased the agility & precision of his skills. The Duck itself is also incredibly tender & flavourful. 🤤

The Handmade Noodles is made al dente with a subtle hints of the underlying egg aroma. Savour the Stock first then add the accompanying YuzuKosho which I have to say honestly, is the most delicious Duck soup eating experience I’ve had & I do love Duck. 🔖 .
If this was served in a Hawker Center or Street Side Food, it’d win a Michelin Star Hands Down. 🏵

Everything was made from scratch & each elements compliment well with one another. Especially the Milk Bread which is airy, light & buttery (so amazing) use it to mop up the thick & luscious Chili Crab Sauce made of Crab Broth & Tomato reduction, they go so god damn well together. 🤤

The Wild Grouper was textbook pan seated perfectly with the skins being crispy & moist juicy flesh. Accompanying the dish is a side of Cold Mad Crab Mayo. Be adventurous & pair each component in anyway you like, it’d be amazing no matter what. PS; there wasn’t even a single drop of Sauce left on the plate. 🔖

ACAMASEATS & GTK💮: Chef Ming’s interpretation of the Local Yong Tau Foo with a little Japanese twist. The Hiryozu (Deep fried Japanese Tofu) has all the right textures, with a nice bite to it. The Ngoh Hiang tasted almost like Grandma’s said @nantheless & that is saying a lot. 🤤

The broth was simmered from ikan bilis & yellow beans, classic, comforting & so fulfilling. The attention to detail for the entire meal was stunning, even a humble piece of carrot here was craved beautifully. A soup for the soul. Thank you so much @blueskiescottonclouds for the invite! 🔖

ACAMASEATS & TIPS💮: 16 different market vegetables was used for this incredibly delicious dish. The vegetables was prepared differently, be it smoking, grilling, pan seared or steamed. Each component brings out the natural flavours & texture of every vegetable. 🤤

The dish itself was already stunning to be eaten on its own. Accompanying it was the Gado Gado sauce which propelled it to another notch. Non Veg eaters might even finish this bowl especially drizzled with the Gado Gado Sauce. 🔖

ACAMASEATS & GTK💮: It all started with this starter, the way Chef Ming @mkthehansum & his GF @xshinyinx put the ingredients together to archive the perfect marriage of Texture & Flavours is Astonishing. What’s even more mind boggling is how thin the Kueh Pie Tee Shells (paper fu*cking thin) were & how delicious it is. 🤤

In this Tartare you could sense the talent & brilliance of this budding young Chef, using green apples, quail’s egg, laksa leaf pesto, shallots & lime, all my dining partners were either going “Oohhhhh or Ahhhhhh” or “nothing can explain this” silent moment. 🏵
.
Truly the Best Pop-Up this year, all the slots of October have been filled & Chef Ming is not taking anymore reservations. But fret not, you might just get a chance to try his food again (At his upcoming 25 seater Restaurant, more news to come these are good times) 🔖
