Because this is the Chinese version, the broth is not as intense as their Malay cousin. Although more sour than sweet, the sourness from the assam is still quite tame. On the whole, the taste is subtle enough for people who does not want their mee siam ($3) to be too sour or too sweet.

I noticed the color of the fried kway teow is not as dark as others. Due to the subdued sweetness from the sweet sauce, the savoriness stood out more. I find the kway teow well infused with a alluring wok hei.

In between mouthfuls, you get a bit of chye sim, bean sprouts, fried egg, lup cheong, pork lard and cockles.

Worthy of a mention here is the crispy pork lard which provided the occasional burst of crunchy saltiness to each mouthful of slippery noodles.

Just like any regular mee chiang kueh stall, the pancakes here come in three traditional flavors such as crushed peanuts, desiccated coconut and red bean paste for 80¢ per slice with an option to add peanut butter to your crushed peanut pancake for an additional 20¢ more.

There is a healthy portion of duck meat on the rice ($4) all drenched in sauce with herbal notes.

The thinly sliced duck meat is soft and tender. With a rather lean texture, there were no signs of fats nor skin. Not sure if these were intentionally removed but I would really enjoy savoring the skin.

The portion of the fish ball mee pok ($3.50) is actually too much for me to finish. Now I understand why there is an option for lesser noodle at $3.20.

There is just enough seasoning sauce to give every strand of mee pok a slick coat of oil without being grossly oily. Do ask for the piquant chili sauce to add dimensions to the already flavorful bowl.

My plate of braised duck rice ($4) is heavily smothered under a layer of starchy sauce that gathers in a pool around the bottom of the rice. What I initially thought to be yam rice turns out to be rice cooked in the braising sauce (hence the color) then topped with even more sauce.

The thinly sliced duck meat is tender with no gamey smell. I particularly enjoy chewing the meat together with the skin while relishing the release of the juices. For a different experience, dip the duck meat in the chili sauce for that tang and spiciness.

For $3, the bowl comes with a very substantial portion of bee hoon and I am surprised to find kang kong which many prawn noodle stalls conveniently leave out nowadays.

Although the traditional bowl uses smaller prawns, the texture is crunchy enough to please. Honestly, I had expected cheapo prawns with mushy texture but I was wrong.

The slightly spicy broth is full of umami goodness yet not cloying. I find descriptive words like "full-bodied", "robust", "gao" (thick) does no justice to the broth at all.

The laksa ($2.50) is served in a traditional looking porcelain bowl together with a porcelain spoon. Although not a very big bowl, it is filled to the brim with shortened thick bee hoon, uniformly sliced fish cake, bean sprouts and cockles.

Some laksa hawkers tend to add cockles into the bowl without much thought which would often sink to the bottom and became overcooked.
.
To me, having such rubbery shellfish is a waste of calories thus I really appreciate how this stall took the trouble to make sure their cockles stayed on top.

The white carrot cake come in rectangular pieces where the cubes of carrot cake and chye poh are held together by a generous amount of beaten egg.

As for the black carrot cake, the cubes of carrot cake, chye poh and egg are haphazardly fried into a mess with dark, sweet sauce.

Whether its the frying skills of the uncle that brought out the flavor or all credits go to the sauce itself, I have no complains.

Between the two, I have to say I prefer the black carrot cake more as the taste is more intense than the white one.

I ordered two plain appams for $2.50. You can add on either cheese, egg, or butter at $2 a piece or have the all-in-one that comes with a lovely name called Princess appam for $3 a piece but no matter which variant you order, they are all served with the same grated coconut and red sugar.

For those raised on Bedok Chwee Kueh and Jian Bo Shuih Kueh, you might find Ghim Moh Chwee Kueh a little different.

They simmer their chye poh (pickled radish) over a charcoal stove with pork lard instead of vegetable oil.

Also, their chye poh leans more on the salty side since no sugar are added.
.
The texture of their chwee kueh is firmer than others but that also mean it is less likely to break into pieces.
.
With a minimum order of four pieces for $2, there have been a slight increase in price (it used to be $1.60 for four pieces three years ago) but consider the fact that these are freshly handmade at the stall daily and think about the laborious work involved for a 80-ish years old uncle, this is actually a small price to pay.
