I point you to Muchachos. If you’d just pay attention to how thick this quesadilla is, as well as how big the entire portion is (just peek at the remaining half on the table), you’d understand why I was so in love. It’s not fancy, special, nor is it particularly instagrammable, but for $12 I get this massive quesadilla that’s so immensely tasty and satisfying I’d happily have it every day. How it works here is you start off picking your protein, followed by the way you’d like to enjoy it (burrito bowl/taco/quesadilla). We had the Pollo Asado (chicken) as prepared as a quesadilla, stuffed with salsa, sour cream, and cheese. Really fuss-free but damn it’s some delicious hearty stuff.
I’m gonna jump right in with a superlative here cause that’s how impressed I was with El Mero Mero’s Baja Fish tacos, enough to say it’s the best fish tacos I’ve had in Singapore. The fresh flour tortillas are great, condiments and sauces fantastic (pico de gallo, pickled shallots, the chipotle mayo is bomb), but what sealed the deal was the tempura tooth fish. The batter was so light it’s almost absent, and the fish was amaaaaazingly juicy and moist — it sealed the deal for me really.
Portions are a tad teeny, meats can be a little under-seasoned; but top it all off with the homemade sauces, then take a bite into their soft, fluffy, toasty tortillas — mmmmm 🤤🤯 What stands them apart from other taquerias lies in how meticulous the chefs are in executing the dishes. Take the quesadilla for example: you can get pretty decent quesadillas elsewhere, but more often than not you’ll find the surface lined with oil, and your fingers slick with grease halfway through a piece. That attention to detail extending towards all their dishes = 👌🏻👌🏻👌🏻
Not that their other Mexican grub ain’t good, but one of my ultimate fave Mexican chow’s this Elotes. A street-style dish of grilled corn topped with chipotle mayo and cotija cheese, so confoundingly plain yet delicious and comforting.
