Cold Brew ☕️🥛

🛒Ingredients: coffee beans, water, milk (optional)

👩🏻‍🍳Process:
1. Ground the coffee beans to a coarse grain size
2. Steep the beans in water (or milk for white cold brew) in the ratio of 1:5. Some recommend filtered water and we used bottled mineral water
3. Fridge for 12-18 hours (too short might give a weaker flavour while too long might increase bitterness)
4. Strain the coffee beans (we first used a normal sieve followed by supermarket-bought @boncafesg coffee filter paper)
5. Enjoy by diluting the concentrate with water/ ice cubes/ adding milk till your preferred flavour profile

😋Taste: 8/10. While we would probably prefer freshly brewed espressos or latté, #coldbrew is much easier to make at home and pretty forgiving in its recipe (different processes get different flavour profiles so play around 😉)! It only requires basic equipment of a coffee grinder & filter paper. Perfect for a smooth cuppa and refreshing pick-me-up as we #stayhome

Sourdough Pancakes 🥞

🍴Ease of cooking: 8/10

🛒Ingredients: 2 cups plain flour
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon raw sugar
1 teaspoon salt
1 cup sourdough starter
1 cup milk
1 large egg beaten
2 tablespoons vegetable oil
.
👩🏻‍🍳Process: Mix the ingredients together to form a batter, top it with a slab of butter and drizzle copious amounts of maple syrup over.

😋Taste: 8/10. Love the tang and texture that sourdough offers baked goods, and this was no exception! Also a great way of using up discard (#nowaste)! That said, while a solid staple, it’s not particularly memorable. Next time we might try to make it slightly fluffier, and perhaps incorporate fruits like bananas and blueberries.

P.S. can you tell we tried to arrange it as close to the pancake emoticon 😅

Chawanmushi
🍴Overall ease: 8/10

🛒Ingredients: egg, shiitake, dashi, carrot, mirin, soysauce; adapted @justonecookbook in using crab meat instead of chicken

👩🏻‍🍳Process: whisk the egg with the seasonings and dashi before straining and steaming for about 20 minutes
.
😋Taste: 7/10. #justonecookbook never seems to fail us in her japanese cuisine recipes. Our #chawanmushi was yummy with subtle japanese flavours but we failed to obtain a smooth texture. Probably needed lower heat and shorter period of steaming

Chermoula Eggplant w Rice & Yogurt 🍆

🛒Ingredients: eggplant, spices, cilantro, brown rice, almonds, yogurt
.
👩🏻‍🍳Process: Followed the recipe in #jerusalemcookbook quite closely, except to substitute bulgur (which we couldn’t find) with brown rice (which we already cooked). Roasted it at 200 degrees for 40 mins and it was perfect!

😋Taste: 10/10. Another winner from @ottolenghi and @sami_tamimi. The chermoula was particularly outstanding - we would slap it on other vegetables and meats! A true orchestra of textures (a bed of silky eggplant with different kinds of “crunch”) and we love being able to pick up each half slice - like half a sandwich, and consume it that way

Fruit Tart
🍴Overall ease: 5/10

🛒Ingredients: doubled @tartebycherylkoh recipe for an 8 inch tart: butter, sugar, almond flour, cake flour, egg, milk, cream, vanilla, cornflour
.
👩🏻‍🍳Process:
Tart shell - use a paddle/ wooden spoon to mix room temperature butter, icing sugar & egg before folding in almond flour & cake flour. Flatten & cling wrap & fridge for at least 6 hours before blind baking it at 180deg for ~30min
Cream - combine everything over low fire but be careful to keep whisking and lowering the heat to prevent curdling (although quick pulses with a blender helps to save it by getting it back to a smooth texture) before folding in cream

😋Taste: 8/10. Although it can’t beat the original #cherylkohtart (no idea how she does it sooo perfectly!), we thoroughly enjoyed our emulation. We lessened the sugar which made it just the right level for our personal preferences given the natural sweetness of the fruits. But practice makes perfect and it’ll be fun to keep trying to improve this 😉

Bubble tea 🥤
🍴Overall ease: 7/10

🛒Ingredients: chrysanthemum pearls - chrysanthemum flower, tapioca flour, sugar

👩🏻‍🍳Process: blend up the flowers till fine, mix with sugar & flour before boiling. Add more flour before rolling the dough into tiny pearls. After boiling the pearls (in normal water then in sugar), prepare your choice of tea and voila
.
😋Taste: 10/10 pearls, 7/10 tea. The #chrysanthemumpearls turned out great - chewy & flavourful. However, the green tea was a tad bitter and it was an experiment adding milk and honey to give the tea more balance. While we’ve somewhat mastered the pearls, next up is improving that tea for a perfect cup of #bubbletea

No cafe, it’s okay! DIY

Egg benedict 🥚
🍴Overall ease: 7/10

🛒Ingredients: eggs, bread, choice of meat & vegetables; hollaindaise: 4 egg yolks, 115g butter, lemon juice, cayenne, salt, pepper
.
👩🏻‍🍳Process: making the hollaindaise is not too hard. Simply place a heat-resistant bowl over simmering water & whisk together the ingredients. Make sure to keep whisking so the sauce doesn’t split & keep the heat low to prevent the eggs from cooking. Then poach the eggs for ~3 minutes. I tried the vinegar + vortex method but it was highly difficult getting a nice round shape so I might have to try the cling wrap method next time; all part of the learning process 😅

😋Taste: 7/10. Love a good #eggbenedict the poached egg went well with #grilledeel (from @fassler_gourmet) and spinach. First time trying this so the #hollandaise probably needed slightly less butter & longer simmering. Would also love to try this again with salmon/ bacon which is more classic of cafe-style egg ben

Banana Pancakes 🥞

🍴Overall ease of cooking: 9/10

🛒Ingredients: 2 ripe bananas, 2 eggs, 0.5 cup almond milk, 1 teaspoon vanilla extract, 1.5cup oats, 2 teaspoons baking powder (which we substituted 0.5teaspoon baking soda for), 0.25 teaspoon cinnamon & pinch of salt

👩🏻‍🍳Prep work: Really easy blending of all ingredients together before searing it on a pan. Hardest bit was making sure the pan wasn’t too hot to prevent burning and getting perfect circles
.
😋Taste: 7/10. Healthy pancakes that taste healthy 😂. They were a bit dense for our liking and more like banana bread than the usual soft fluffy pancakes. We paired it up with sour berry compote & sweet maple syrup to make for a satisfying & hearty breakfast

Teriyaki salmon 🐠

🛒Ingredients: easy to find salmon & the sauce was made of soya sauce, Mirin, maple syrup, garlic & ginger

👩🏻‍🍳Prep work: simply marinate for 20mins (or overnight) and grill it on a pan. Make sure the pan isn’t too hot & use low heat as it’s easy for the salmon skin to burn
.
😋Taste: 7/10: always enjoy a good salmon. Followed closely to #gordonramsay #terriyakisalmon recipe and found it a bit on the saltier side so might have to adapt it next time.

🛒Ingredients: The stars of the dish are the seared steak, sushi rice, onsen egg. The rest of the ingredients are up to whatever is available in your pantry!

👩🏻‍🍳Prep work: Pretty straightforward stuff - sear the steak, roast a bunch of vegetables, cook rice. Top it off with an onsen egg.

😋Taste: 8/10. Seared steak, runny egg, and sushi rice is always a solid combination.
