choice of ice cream: dark chocolate truffle
before we freak out about truffle ice cream, letâs focus on the sâmores first đ€Ș beneath a torched marshmallow top that has a silky smooth texture inside, was a layer of rich chocolate ganache. the biscuit crumble had a prominent taste of cinnamon spice, and the sâmores had a thin base layer of chocolate cake. it all went so so well together, and it wasnât overly sweet. though it looks small, we found the portion to be just right!!
moving on to the dark chocolate truffle - which literally SCREAMED TRUFFLE. no, not the chocolate truffle; the mushroom truffle. it was so intense, so rich, so unique!! the table had differing opinions on this - itâs either you love or hate it.
choice of ice cream: sur del lago 88%
the brownie was a little dry and cakey when it was it was first served; but as the ice cream melted in, it became more fudgy. however, it was a little sweeter than weâd expected - too the point that when paired with the sur del lago 88%, the ice cream became sweet too!
there were different layers here - yuzu curd, white sponge, and a crispy praline base; all encased in a velvety ruby raspberry mousse. we loved the different textures each layer provided, and how the flavours were quite distinct and yet blended together so nicely.
the cheesecake wasnât overly heavy nor thick, with the lychee being the more prominent flavour and hints of floral notes from the rose. the lychee jelly was phenomenal with its lychee slices / bits inside. the crumble base remained crunchy, and not overly buttery.
