The braised beef cheek ($28) was well-executed to be fork tender and overall moreish! It was set on a bed of creamy mashed potato, distinctly fragranced with truffle.

Tender medium rare Bavatte steak, served with a flavourful black pepper sauce and crispy thin-cut fries. The fish & chips had crisp and thin batter but could do with more seasoning.

Would recommend this over the wagyu sando (that was a buttery bun instead of expected white bread). Tender meat with nice char but not as much marbling as expected of wagyu
The sides were more memorable, with the
𝐩𝐨𝐭𝐚𝐭𝐨𝐞𝐬 (4.5 ⭐️; $9) being our favourite and must order! Crisp exterior with soft interior, the cooking in wagyu beef fat added an extra savory element. Made more enjoyable with the mix of herbaceous dill cream and pops of juiciness from the ikura. The cheesy 𝐬𝐩𝐢𝐧𝐚𝐜𝐡 (3.5 ⭐️; $7) provided a refreshing balance to the steak with its creamy parmigiano-reggiano sauce, while the 𝐦𝐮𝐬𝐡𝐫𝐨𝐨𝐦𝐬 (3.5 ⭐️; $9) were thick and juicy, fragranced with herb butter.

Pink with a slightly charred exterior. Personally found the meat tender but on the chewier side and bland, although appreciated the side of pepper & salt to season to one’s preferred taste. Pretty standard medium rare steak 🥩

For Western options, they offer 𝐚𝐧𝐠𝐮𝐬 𝐛𝐮𝐫𝐠𝐞𝐫 ($17) which was thick and generous with ingredients but could do with a juicier patty. The 𝐁𝐮𝐟𝐟𝐚𝐥𝐨 𝐰𝐢𝐧𝐠𝐬 ($18) had an addictive sweet-savory-spicy marination.

Both the warm summer salad ($24) and charcoal octopus ($36) had chewy and tender octopus. Personally preferred the former for the generous fresh greens, chewy quinoa, crunchy breadcrumbs, and fluffy egg.

🍴So many modern/ fusion options at the hip @thebedokmarketplace that we were spoilt for choice and definitely planning on a return trip.
Enjoyable wagyu don that came with a generous serving of minced beef and thin wagyu beef slices at this price point. Loved the slight char yet tender minced wagyu that had distinct but not overpowering truffle aroma. Although retaining a pink interior, would have liked for the lean rump slices to be juicier. Given their name, also felt that the slices could do with more sear and smokiness. The onsen egg added glorious creaminess while the wasabi was a great earthy, spicy balance (wished there was more of it!).

𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐍 𝐖𝐚𝐭𝐞𝐫𝐦𝐞𝐥𝐨𝐧 𝐍 𝐖𝐚𝐟𝐟𝐥𝐞𝐬 ($40; 4 ⭐️) - Was perplexed as to how chicken, cheddar cheese waffle, and spiced watermelon would go together but it turned out to have left quite an impression! Brined for over 24 hours, the tender and juicy meat was enveloped in a crispy batter; just how we like our fried chicken! The spiced watermelon would probably not be for everyone but we enjoyed the refreshing sweetness that balanced out the greasier components. It was served with bourbon maple syrup and hot sauce, and the complexity the bourbon injected depth to the sweet maple. The hot sauce leaned towards the sour side which some might appreciate.

The guinea fowl was redolent of hearty winter flavours - two tender and well-marinated slices were drizzled with a fragrant sauce made from juniper berries and duck jus. It was served with a single carrot and chestnuts that added sweetness to contrast the tangy jus.
