This gorgeous dish of Harry’s mussels, Hawkes farm corn and lavender showcases the best of Flinders. I hear Harry harvests these mussels by hand and only for a certain part of the year. The corn is light, creamy and very sweet, and contrasts beautifully against the mussels.

These scarlet king prawns from @ester_au has a smokey sweetness to them, complimented by the intense umami from the fermented prawn butter and the crunch of deep fried capers. A couple of drops of lemon juice balances the richness nicely. Its been more than a week now but I remember the taste of each mouthful as vividly in my head as when I first ate it. #esterrestaurantandbar #burpple
