The highlight for me at Madame Fan was this 过桥醉酒龙虾象拔蚌汤. There were many things I like about this dish. First, the lobster was very fresh, tender, succulent. The lobster was fully cooked, yet it has as much sweetness as if it was served as a sashimi. Next was the soup itself, with it’s depth of sweetness and flavour, enhanced by 20-year-old Chinese wine, Gu Yue Long Shan.
I had a chat with the chef about the lobster itself. Chef explained that he used the “过桥” cooking technique, whereby partially cooked lobster was rested in the soup it was served with, till it was fully cooked. That explains the amazing texture of this lobster, made possible also because the lobster used was a live lobster. This also explains the English translation of this dish “Bridges Lobster” (a literal translation of the cooking technique, 过桥, is “crossing the bridge”).
Other classics for CNY include the Braised 6-head Truffle Abalone (I posted on 29 Dec 2019), Charcoal grilled Wagyu Beef, and Pineapple White Chocolate (I posted on 2 Jan 2022).
Their CNY menu starts with a minimum of only 2 persons from $138++ per person. For group reunion, Madame Fan has six private dining rooms and a VIP dining room. The VIP room can accommodate a private party of up to 14 guests. There would be two seating available on Chinese New Year Eve: 5.30pm to 8pm; and 8.30pm till late.

This crispy duck with soft wraps were an immediate hit with my family .

This duck as crisp and aromatic - I would have liked it a little leaner but I Guess the aroma comes from all the fats 😊. Reminds me of a dish that I once ate at royal China at raffles hotel- which has sadly closed .

I actually like this better than Peking duck 🦆 because you get to eat the duck meat as well .

The cucumbers strips were a little dehydrated which was a little let down for the type of prices you pay.

Still an excellent dish.


This was one of the best toufu dishes I have eaten in a Long Long while.

Homemade tofu mixed in with fish meat and then cooked with plump shiitake mushrooms and crunchy abalone mushrooms.

Such a complex tasting dish although made with very simple ingredients .

A theatre - dining concept by London based restaurateur, alan yau - If the ambience and deco isn’t enough to draw you , the food will .

Absolutely blown away ....

I arrived without much expectations because from the reviews , I thought this place was too much of a “ FANfare “ .

Live jazz singing set in a colonial setting ? What ?
Can they serve up anything good ?

But I was blow away by the fine execution of the dishes.

The ribs were well marinated , tender and off the bone and devoid of any porky smell.

You eat them effortlessly .


Yummy big portion of half a duck. Suitable for 3 persons to share 1 plate.

Had an enjoyable lunch here at Madame Fan. Service and ambiance was great. Food was good. Ordered ala carte during a weekday lunch. My highlight is the crispy duck. Love how its done, soft meat, not so fried skin and had such nice aroma. From top, sri lankan mud crab wanton, mooli puff, scallop siew mai, crispy duck and ee fu noodles. For the mud crab wonton not much of crab meat (So no wow factor for this). Prawn and scallop was fresh for the siew mai. Mooli puff turnip was crunchy, skin was flaky. Ee fu noodles was good. Would love to come here more often if i had deep pockets. 🙂 this place nice for business lunch and romantic dates. Menu and prices can be found online. They do have set lunch at $68++ per pax minimum 3. That isnt shown on their website
