The restaurant famous for their house made all-natural dashi prepared using aged katsuobushi has opened a new sister arm at Bukit Pasoh near Outram MRT station.

For only $29++, you can have their dashi in a shabu shabu as part of a set lunch with Hokkaido pork, or black Angus beef. Ingredients are imported twice a week from Japanese prefectures such as Mie and Hyogo. Otherwise, you can go for their wagyu in a stock made from their dashi, as pictured. All set lunches include chawanmushi, tsukemono, wasabi kombu, ikura, katsuobushi, miso soup and dashi rice.

Dashi Shabu Shabu Black Angus Beef Set

The sets are accompanied by fresh seasonal vegetables as well as two house dips – dashi ponzu and sesame – for those who like their meats full-flavoured.

The A4 Wagyu is a very good quality meat that has a beautiful fat marbling and melt-in-your-mouth tender texture.

$29 can get you a Shabu-Shabu Set with US Black Angus Beef or Hokkaido Pork. Among all the set lunches I tried, the Shabu-Shabu not only brings out the most of the dashi stock, but it also allows you to appreciate the meats as well. For the same price, I recommend getting the beef, which pairs really well with its house dips - dashi ponzu and sesame.

Bonito flakes were added upon serving, but they seemed to just add on to the saltiness of the sauce.

Even if you are familiar with the local claypot rice, this Japanese Donabe version comes across with less salty with more of that deep-lingering taste of dashi.

That is because food that is cooked in donabe is higher in natural umami flavour and healthier as well, as less seasonings are needed to enhance the taste.

As for the rice, the famous Hokkaido Yumepirika rice is used, known for its soft fluffy taste, and glossy appearance.
