Quite tender, and everything was slightly sticky. They are know for seolleongtang but I believe oxtail tastes better in stew
The oxtail had a interesting beefiness that's somewhat different from what we have at home. The soup while light, also has a milkiness in taste that's v unique. Guess that's what grants them their bib gourmand.
