The beef isn't particularly good even, not melty. It's decent, esp if you cook it to medium rare. Quite easy to overcook tbh, so be careful
The whole idea of the place is Dashi, l wasn't particularly impressed. It's alright for sure, but if you don't say anything I wouldn't imagine this is a 100bucks Dashi place at all
Not to mention the portion is srsly tiny, idk if it even feeds 1
They said UP 200+, but for 200g UP is only 136++
I really don't understand how they survived after all these years. It's a fake atas place, the prices are up there but everything from the ambience to the staff(not Japanese at all) is not up there at all
The restaurant famous among Japanese dinners that come for shabu shabu, side dishes and even drinks.

I like the wagyu beef, tender and melt in the mouth,and my fav dipping will be yuzu rice malt.
The dashi stock made from dried bonito flakes that takes two years to process, doesnโt contain any MSG or other artificial seasoning. So itโs easy to drink and comforting.

I am a big fan of hotpot and when I heard that @marusaya_singapore has launched a NEW Tonkotsu Gyokai soup, I just have to try it!
The new Tonkotsu Gyokai soup is a delightful combination of robust pork soup and gyokai (fish dashi soup) prepared with their signature Dashi. In addition, they used freshly shaved Katsuobushi (dried bonito flakes) to add to the sweetness and depth of the broth. No wonder the broth was so hearty and flavourful!
We started our meal with ๐๐ก๐๐ฐ๐๐ง๐ฆ๐ฎ๐ฌ๐ก๐ข ๐ฐ๐ข๐ญ๐ก ๐๐ง๐จ๐ฐ ๐๐ซ๐๐ ๐๐ง๐ ๐๐ฎ๐ณ๐ฎ ๐๐๐ฌ๐ญ. Silky smooth egg custard paired with fresh and meaty snow
crab was just the perfect way to warm up our palates! To make a wonderful blend of flavors, we combined the yuzu zest with the egg custard and snow crab.
Next, we had the ๐๐จ๐ง๐ค๐จ๐ญ๐ฌ๐ฎ ๐๐ฒ๐จ๐ค๐๐ข ๐๐๐ฌ๐ก๐ข ๐๐ก๐๐๐ฎ, which requires for a minimum of 2 diners. We had the A5 Wagyu Beef Umami Part and Hokkaido Pork. I like it that they served Tonkotsu Gyukaiย Dashi Shabu with ramen and assorted vegetables, so you can slurp up all the remaining broth!
A special point to note is that they have six different kinds of dipping sauce to pair the shabu with - Ponzu Vinegar, Sesame, Sour Plum, Leek Sesame Oil, Sukiyaki and Yuzu Rice Malt. My personal favourite was the Yuzu Rice Malt as it pairs well with the meat and refreshes our palates at the same time!
We ended the hearty meal with ๐๐๐ญ๐๐ก๐ ๐๐๐ ๐๐ซ๐๐๐ฆ ๐ฐ๐ข๐ญ๐ก ๐๐จ๐ง๐๐ค๐, a traditional Japanese sweet consisting of azuki bean filling sandwiched between two thin mochi wafer. Love the presentation!
This features a base of warm wobbly soft silken egg custard infused with dashi broth, resulting in a deep eggy sweet savoury flavour.

Topped with luxurious creamy bafun uni / sea urchin and juicy globules of ikura / salmon fish roe, bursting with delightfully briny sweet salty flavour.

Finished with a chrysanthemum flower petal which lends a touch of visual elegance, and a delicate floral note.

This highlights sweet potato as the star ingredient.

Of the 2, the Sweet Potato Cake has a nice soft moist crumbly texture, with mild sweet savoury earthy flavour. A drizzle of honey makes this more appetizing with floral sweet notes.

The Sweet Potato Ice Cream was good, with stronger earthy sweet flavour, although it started to melt rather quickly.
