I am a big fan of hotpot and when I heard that @marusaya_singapore has launched a NEW Tonkotsu Gyokai soup, I just have to try it!

The new Tonkotsu Gyokai soup is a delightful combination of robust pork soup and gyokai (fish dashi soup) prepared with their signature Dashi. In addition, they used freshly shaved Katsuobushi (dried bonito flakes) to add to the sweetness and depth of the broth. No wonder the broth was so hearty and flavourful!

We started our meal with 𝐂𝐡𝐚𝐰𝐚𝐧𝐦𝐮𝐬𝐡𝐢 𝐰𝐢𝐭𝐡 𝐒𝐧𝐨𝐰 𝐂𝐫𝐚𝐛 𝐚𝐧𝐝 𝐘𝐮𝐳𝐮 𝐙𝐞𝐬𝐭. Silky smooth egg custard paired with fresh and meaty snow
crab was just the perfect way to warm up our palates! To make a wonderful blend of flavors, we combined the yuzu zest with the egg custard and snow crab.

Next, we had the 𝐓𝐨𝐧𝐤𝐨𝐭𝐬𝐮 𝐆𝐲𝐨𝐤𝐚𝐢 𝐃𝐚𝐬𝐡𝐢 𝐒𝐡𝐚𝐛𝐮, which requires for a minimum of 2 diners. We had the A5 Wagyu Beef Umami Part and Hokkaido Pork. I like it that they served Tonkotsu Gyukai Dashi Shabu with ramen and assorted vegetables, so you can slurp up all the remaining broth!

A special point to note is that they have six different kinds of dipping sauce to pair the shabu with - Ponzu Vinegar, Sesame, Sour Plum, Leek Sesame Oil, Sukiyaki and Yuzu Rice Malt. My personal favourite was the Yuzu Rice Malt as it pairs well with the meat and refreshes our palates at the same time!

We ended the hearty meal with 𝐌𝐚𝐭𝐜𝐡𝐚 𝐈𝐜𝐞 𝐂𝐫𝐞𝐚𝐦 𝐰𝐢𝐭𝐡 𝐌𝐨𝐧𝐚𝐤𝐚, a traditional Japanese sweet consisting of azuki bean filling sandwiched between two thin mochi wafer. Love the presentation!

This features a base of warm wobbly soft silken egg custard infused with dashi broth, resulting in a deep eggy sweet savoury flavour.

Topped with luxurious creamy bafun uni / sea urchin and juicy globules of ikura / salmon fish roe, bursting with delightfully briny sweet salty flavour.

Finished with a chrysanthemum flower petal which lends a touch of visual elegance, and a delicate floral note.

This highlights sweet potato as the star ingredient.

Of the 2, the Sweet Potato Cake has a nice soft moist crumbly texture, with mild sweet savoury earthy flavour. A drizzle of honey makes this more appetizing with floral sweet notes.

The Sweet Potato Ice Cream was good, with stronger earthy sweet flavour, although it started to melt rather quickly.

There's a variety of different oden, style is rather like the Singaporean Yong Tau Foo / YTF, where you pick and choose various pieces.

The Money Bag (Tofu Puff With Rice Cake) was the most interesting for me, the spongy light tofu puff absorbs the savoury sweet hot pot broth, while the filling of soft rice cake lends a light chew to texture.
.
The tube-shaped Chikuwa is lightly savoury salty with a bouncy chew, while the round spongy Satsuma Age carries a layer of savoury sweet notes in the fish cake.

Not so used to the triangular Hanpen, with its soft fluffy texture and mild sweet savoury flavour.

We were treated to the A5 Miyazaki Wagyu Beef Platter Set.

Succulent premium cuts of wagyu beef, sliced thin and flash cooked in the bubbling hot pot dashi broth, with a tender juicy chew to texture and bold meaty fatty savoury salty flavour. Great on its own.

There's crisp lettuce with bright vegetal sweet flavour, bouncy shimeiji mushrooms with delicate earthy sweet flavour, crunchy leeks with sharp vegetal earthy bitter grassy flavour, and wobby soft silken tofu beancurd with mild grainy sweet flavour.

Their all-natural basic dashi (Japanese soup stock) is known as satsuma hongare-honbushi.
.
It's made using skipjack tuna fish / bonito flakes / katsuobushi that is smoked and dried for 3 weeks, then fermented for more than 2 years.
.
This aged bonito is then cooked with rishiri kombu kelp seaweed (harvested from the frigid waters of Northen Hokkaido in Japan), for over 1 hour to create their delicious dashi stock, which serves as the base for the majority of dishes here.
.
Has a lovely earthy savoury sweet flavour, pure and comforting.
