Marutama Ramen (Tiong Bahru Plaza)

This won us over. We're not fans of ramen using chicken broth and we weren't fond of Marutama, but this visit was wholly impressive. This soup didn't have the ickiness of usual chicken broth ramen, while replicating the punch of pork broth yet without the jelak. Don't forget this is not halal - see that char siu - but a conscious effort to use chicken broth to make a good pork ramen. It showed. The seaweed was outstanding too, not an afterthought but an X-factor. Add to those an ajitama with the perfect gooeyness. The weak link was the noodles, which weren't very authentic.
