One of the last stalls in Singapore selling oyster cakes from Fuzhou. Was introduced to this stall 30 years ago by a colleague. Glad they made it through the years.

Once I see oyster cakes, I can't ignore.

Oyster cake @ $2

It's alright, maybe cuz it's not freshly made so maybe it could be better.

This is the third place where we tried this traditional dish and it's the cheapest here but the other two are better.

Fuzhou oyster cakes is one of those traditional food dishes which is gradually vanishing from our local food scene.

The ladle used to make this dish gives it the unique UFO shape. Rice flour batter is first poured into the ladle. It is then filled with fresh oysters, minced meat, prawns and chopped parsley. The filling is then covered with more batter. The ladle is then lowered into boiling hot oil and deep fried till golden brown. For those who are not familiar with this dish, it is conceptually and textually similar to takoyaki except bigger and with way more ingredients.

Maxwell Fuzhou Oyster Cake is one of the few stalls keeping this dish alive. The oyster cake is crispy on the outside and yet soft tender and savoury on the inside. I recommend having it with the chilli sauce provided on the side.

I am not too sure why this dish has fallen out of vogue as it can be eaten as a snack or as part of a meal. But do support them if you are in the area!

$2/piece - affordable but not exactly cheap for the size. It’s kinda small, with a few peanuts sitting atop the UFO and 1 oyster within. Thankfully, it wasn’t exactly doughy, with a decent amount of minced meat within. Unfortunately it was a little too “fried” for my liking - the dark drown colour kinda sends vibes of reused oil. It was also too salty for my liking - both the dough and the minced meat could do with less salt. Perhaps the dark brown colour of my UFO wasn’t a result of ‘recycled’ oil but rather, soy sauce (?) I wish there were more cilantro greens to balance out the savouriness of this pancake!
