With a delicate and refined stock made from thoroughly boiling the offal of fresh fish, this is not ramen you see everyday. Even the toppings are unique, and every bowl comes with a chicken ball and minced shrimp seafood ball. Both are very good and clean tasting, but if I’m to be honest, I found the soup too light for my taste, and the noodles slightly too soft. What I did enjoy though was the charred rice ball with mackerel pickled in rice-bran paste that goes into the soup after you finish your noodles. This is still worth a try, But if you only have time for one seafood soup base ramen that’s still light on the palate but more flavourful, head to Ginza Noodles for their excellent clam ramen.
