Housed within Stirling, Stirling houses different concepts during the day with One Man Coffee, Stirling and MiCreme Lab operating throughout different hours. MiCreme Lab operates from 5:30pm alongside Stirling every day and offers waffles that are pretty unique to themselves. One would be this Lemon Meringue Waffle which comes with Fresh Lemon Waffles (yes, the batter contains lemon zest), meringue, lemon sauce with the recommended flavour of Honey Lavender ice-cream to go along. The Honey Lavender ice-cream is something that those who prefer more dimension of sweetness to their ice-cream would pick — zingy and naturally sweet without trying to burn the throat, it's soothing while it carries a floral aroma and definitely something to choose that is light and refreshing to the tastebuds. The waffle was a little limp — not as crisp as expected but still rather plush inside, and carried familiar flavours of childhood Lemon Biscuits by Kong Guan with the flavours of the buttermilk batter and lemon zest coming together as one. The crumbles adds a little crunchiness to add a little texture to the dessert, though it would be nicer if they were more crisp. While the lemon sauce worked well with a good balance of zing and sweetness just like how one would a good lemon meringue tart, the meringue was a little too airy and tasted charred for some parts were burnt when they blowtorched it. MiCreme Lab's has some potential, and their creative approaches to the classic cafe favourite is commendable especially where they seek to replicate an all-time favourite dessert in waffle form. While they managed pull it off quite decently with some cred, there are some details that perhaps they could look into (e.g. the burnt meringue) to improve the overall experience of the dish in particular.

I jumped to get this because I'd never had a Lemon Meringue Waffle elsewhere before. It proved to be a genuine "burst of sunshine" with its bright note of citrus flavour in the waffle itself and the neat squirts of lemon curd; both of which were nicely balanced by the sweetness of the marshmallowy meringue.
You will not find any stabilisers in Micreme Lab's housemade artisanal ice-cream because they are all about using the freshest ingredients. Consequently, that scoop of Lavender Honey ice-cream plonked in the middle of the waffle tasted very good.

Served with salted butter popcorn ice cream and salted egg sauce. Soft, light waffles with a slightly crisp exterior. This was my favourite waffle during our tasting at Micreme Lab by @beyondplate.sg.
When you hear salted egg these days you might think "yet another one", but this salted egg sauce was surprisingly good and one of the better, if not best tasting salted egg sauces I've tried from a café of late. Just the right amount of sweetness & saltiness with a hint of fine salted egg yolk grains that gives the sauce a teeny bit of texture.

If you're a chocolate lover, please allow me to introduce you to this Belgian chocolate waffle. It's extremely crunchy and has an intense chocolate flavour. When I ate it with the chocolate sauce that was drizzled all over, the texture made me think of a choc chip brownie that's been baked to a crispier finish in an oven, so the chips within are all soft and "melty" from the heat. Total yums! The waffle paired very well with my selected ice-cream flavour: the Banana Nutella.
Speaking of which, all the ice-cream at "Micreme Lab by Beyond Plate" is handcrafted in-house. Chef Thamil explained that they use only the freshest ingredients such as Hokkaido milk, and leave out the chemical-tasting stuff like stabilisers. So this should give you an idea of the quality you'll enjoy here.

At yesterday's invited tasting, this prettily plated dessert of Raspberry Cheesecake Yogurt Ice-cream Popsicle ($8.90 nett) sure hit the spot especially since the weather was sweltering. I liked how Chef Thamil created it in such a way that there's contrast yet harmony. Creaminess from the raspberry flavoured block of ice-cream was balanced with the refreshing tartness of frozen raspberries within and the sweetish dark chocolate outer coating. The colourful fruity pebbles cereal buried inside the ice-cream gave a bit of crunch to every bite too.

Completely incongruent with the rather rundown surroundings ("Micreme Lab by Beyond Plate" is a pop-up business hidden away inside Stirling Grill), this Coconut Pannacotta is a bright shimmery gem in every way. Its impressive silky smooth and voluptuous lusciousness (which I'd have been happy to have on its own) enriched further by a wonderfully fragrant Gula Melaka cream. Some might argue that the cream could be thicker in consistency but I felt it was enough. Otherwise, it would have been "jelak".

I would say this Asian-influenced plated dessert is my top pick from all that we had at yesterday's invited tasting. Every component here in my opinion, was executed with aplomb by Chef Thamil and his assistant (who's also his girlfriend).
