A supremely full-bodied yet smooth soup made from chicken stock, niboshi(dried sardines) stock, clam stock and shoyu tare steals the show from the excellent soba noodles imported from a famous Kyoto soba maker.

Already unusual in it’s use of clam amongst its ilk, this bowl of goodness sees even more uncommon toppings, with the likes of tender chicken slices, mitsuba greens, batons of mountain yam and a fishcake knot. It all works brilliantly and is utterly comforting to slurp down on a cold, windy day. I’d easily give some of the more famous ramen a miss for this.
