This bowl of goodness hails from the Hong Lim Market, renowned for its Michelin Bib Gourmand status. Though they were out of meekia and meepok during our visit, we gone for yellow noodles and kway teow. The noodles were delightfully QQ and slurp-worthy.

In the medium-sized bowl, you'll find an array of toppings: four bouncy meatballs, two wantons with smooth skin and flavourful marinated meat, grainy sliced pork, a hint of minced pork, pig liver, pork lard, spring onions, and a crispy dried sole fish. These noodles had no trouble soaking up the special mix sauce, resulting in a flavour explosion in every bite. The sauce, generously provided, gave a unique blend of distinct vinegar taste, lard oil, and chili, giving it a robust flavour profile that's truly slurptisfying.

Don't underestimate the simplicity of the soup either; it's packed with savoury goodness and a rich porky flavour that rounds out the meal nicely.

Back at @fangkocoffee and the food and coffee we had was satisfying 😍

The Wet Indomie with Chimken ($11) was the upgrade I needed. As an Indomie lover, I liked how the signature taste profile was kept, but upgraded with a sweet savoury and eggy sauce. The smashed chicken was slightly crispy on the edges, not dry and flavoured well with their sambal. I got only level 0 spice and it's already quite spicy for me! The portion is quite huge as well.

The Nasi Lemak Ayam Berempah ($14) features aromatic coconut rice with good fried chicken! The chicken had a crispy exterior with meat within that is not dry. I am happy to note that they seasoned their chicken meat well, as it had flavour all the way to the bone. As expected, their sambal was fiery with a good citrus kick.

To cool off the spice, their Fangko Melaka Brew ($11) is one good option. Creamy, aromatic yet not too sweet, the coffee notes complemented the Gula Melaka very well. This larger bottle is definitely enough for 2 to share!

Ordered the pork and chicken katsu 🍛🍛
The curry is a little diluted but overall portion is great. The proteins were good too and love that they gave some pickles.
Would come back again since the price point is really good.

The dessert on the specials menu, which was the Apples & Berries ($15++) is equally simple yet equally satisfying. Poached apples are married to a mascarpone berry compote, candied walnuts and milk ice cream for a perfect finale to a delightful dinner. All the vital textures and flavours are represented here: sweet, sour and salty are accompanied by crunchy, creamy, crisp and tender textures to maximise engagement with your whole palate.⠀

Even though Pilot is a little out of the way, I can definitely see myself flying down here a couple more times to dine at this small but superb restaurant.

@pilot.sg run of divine dishes doesn’t just end at the big plates (mains), their fantastic form carries over to the deceptively simple sounding desserts. The Butter Cake ($12++) sounds so painfully pedestrian that you’d pass over it without a second thought, but you’d be cheating yourself out of a shockingly superb dessert. The butter cake was astonishingly moist but not oily, and each soft & fragrant crumb of cake was a class complement to the salty & sweet camembert ice cream.⠀

Even though Pilot is a little out of the way, I can definitely see myself flying down here a couple more times to dine at this small but superb restaurant.

Fangko is famous for their Smash Chimken! Here, you can choose your preferred spice level, which ranges from Level 1 to Level 21!

Here is what we tried:
-Wet Indomie with Chimken ($11): If you love creamy slurpy noodles, get the wet indomie version! Comes with shrimp crackers and an onsen egg too! Opted for level 1 spice and it was already kinda spicy for me!
-Grilled Cheese Sandwich ($14): This grilled cheese sandwich blew my mind and it was the best grilled cheese sandwich I have ever tasted! This sandwich is filled with creamy avocado and topped with lots of shredded cheese! I think there was some marmite on the toasties as well, which elevated the taste! The whole combination is so good!
-Fangko Melaka Brew ($6): This coffee blew our mind! Have not tasted such fragrant coffee before! Rich and aromatic! For non-coffee drinkers, this is a good cup of coffee to start off with!
-Butterfly Lychee Soda ($7): Pretty colours and super refreshing!

A very enjoyable dining experience! They have quite an extensive menu, and I will be sure to check out more of the other dishes!

@pilot.sg Beef Short Ribs were long on flavour and tenderness, and was well worth the order despite the steep asking price of sixty eight bucks before taxes. Sixty eight. We were on the verge of greatness. We were this close. Besides being huge on flavour, the beef portion was pretty ponderous, ideal for sharing between four people or for sharing with you, yourself and thyself.⠀

The Black Angus short ribs were as tender as a quality ribeye, and the amount of effort put into making the short ribs this tremendously tender and perfectly medium rare is commendable. Each bite is blissfully beefy, the seasonings kept simple with a blend of salt, pepper and smoke from the grill allowing the superior quality of the beef to dazzle. ⠀

However, Pilot Kitchen serves the short ribs with a pinch of their own gunpowder spice mix, and a dollop of tzatziki. The beef didn’t require it, but firing a dash of that gunpowder spice on your beef resulting in an explosion of fantastic flavours. The spicy, salty and nutty qualities of the gunpowder spice blend made the beef even more exceptional, and I found myself sprinkling that gunpowder spice on everything. The tzatziki was nice and creamy, but felt out of place on the plate.⠀

Pilot’s main courses were magnificent, but their desserts are divine too.

Hong Lim Hawker is one of my favourite to-go hawker, as they have so many nice food here! (But also, most of the popular food stalls have extremely long queues on both weekdays and Saturdays)!

Always making it a point to try something new each time I am here! This trip, we tried the noodles from The Noodle Memories (Unit 02-27)! Got the specialty dry chilli noodle ($5.50) at xiao la chilli level. It comes with you mian noodles, black fungus, poached egg, minced meat sauce and a crispy taukee! Their noodles are made fresh on-site! Their xiao la chilli spice level is also quite spicy already, so be careful if you cant take spice well!

Finally trying 大豆小豆 at Hong Lim!

They have pretty interesting and unique tauhuey flavours! You can also customise the sugar syrup for your tauhuey bowl and choose your preferred additional toppings!

Here is what we had:
💙one blue beancurd + tang yuan
🖤black sesame sauce beancurd + tang yuan
🧡soya milk

Smooth silky tauhuey! The soya milk drink also tastes slightly different from usual hawker stall! There was a nutty fragrant taste to it!

Just to balance out the onslaught of meat, we got a portion of Pumpkin ($24++). The pumpkin was sweet & tender, and was roasted so well that even the rind was edible. The leek cream tended toward the sweeter side, but it was still quite addictive and we were busy scraping every last drop of it off the plate. I would say that the Pumpkin was more of a sweet dish, and could theoretically be a dessert.
