Nadai Fujisoba Ni-Hachi, Japan’s number one soba restaurant, lauded as a soba specialist makes its noodles in store every day to ensure absolute freshness. “Ni-Hachi” means “2:8 ratio”, which is the golden combination of wheat flour (20%) and buckwheat flour (80%) needed to make the perfect soba. Buckwheat flour specially imported from a well-established milling factory in Japan and the flour is then kept in a warehouse with excellent temperature control to maintain the quality.

Will definitely come back here for soba and I regret to say it’s quite difficult to eat soba anywhere else now in SG 😅 The noodle consistency and texture is just right to keep you wanting more!

Tried the dried soba this time round and am Glad to say I enjoyed it a lot better than their soup versions ☺️

Interesting dish although my friend think that it looks like something straight out of a zi char kitchen. 😂 The fried soba manages to retain it's crispness even though it was blanketed by the thick and starchy yet fragrant sauce. Comes with a variety of ingredients too. Worth a try I would say!

Nowhere as impressive as their tamago. Duck meat that tastes like beef. Duck meatballs that tastes like pork. We wonder if it's just the chef's off day when making this as we expected better things from Ni-Hachi. Would like to give the other soba offerings a try again!

One of the recommended dishes on Burpple and its pretty obvious why after you've tasted it. The truffles brought out the fragrance of the crab meat and egg without overpowering them. The tamago is as springy and tender(?) as you would expect. 😋

I found the combination a tad strange and it didn’t cut it for me. I should stick to my usual traditional favourites.

One of our friends is a regular here and he says that this is the bomb! It was love at first bite. Chicken skin salad which is so addictive. Can’t stop once you start.

Hands down the most decadent Dashimaki Tamago I have ever tasted, Nadai Fujisoba Ni-Hachi’s signature tamago is definitely a must-order. Soft yet firm, the layered block first arrives without any sauce and seeing just the lovely specks of truffles seasoned between the rolls was almost enough. Then the server pours over a generous amount of thick steaming sauce straight into the pan, which really gave the dish an extra oomph with the sweetness of crustaceans in the mix. Hence, highly recommended from one egg lover to another, I really enjoyed the deep aromatic flavours of the earthy truffles, savoury dashi-soy sauce, and sweet omelette. The Special Truffles Dashi Maki Tamago ($15) also had a really luxe mouthfeel with the shreds of crabmeat in their Club Japanese Sauce

Kamo Nanban Tsuke Soba
Thick soba noodles, dashi, sliced duck meat, duck meat balls, yuzu, sesame

I will say, it is overpriced for the quality of food. It is good in quantity but quality wise, the noodles are lacking in taste and softness. Dry soba come cold:/ soup soba is an interesting experience due to its large bowl. But I will recommend to try once and that's it. Find somewhere cheaper.

With the opening of a dedicated soba restaurant, hopefully they will get more converts. @fujisobasingapore has a wide selection of hot and cold soba dishes makes one spoilt for choices.

After much consideration, we went for Hot Benisyouga Pakuchi Kakiage Soba ($14) and Zaru Dipping Soba ($9) accompanied with Assorted Tempura ($11). They are so generous with soba noodles (similar to Japan) that we couldn't even finish. Plus their Truffle Dashi Maki Tamago with Club Japanese Sauce ($15) is a must have dish. Best eaten hot, savour these fluffy omelette covered in thick dashi stock with strong truffle fragrance.
