Let's talk Mee Siam. Are you for a thicker gravy, or the thin, watery (and usually more sour) kind?
I am for the latter. Like this one from "Nor's Nasi Padang". The still-crunchy beansprouts and chives also contribute to my fondness of it.
"Nor's Nasi Padang" dishes up a Lontong with gravy that strikes an even balance between "lemak" (rich) and slurp-ability. The pieces of "ketupat" (compressed rice cake) come in flattish pieces, which allows them to soak up the gravy well. Besides a whole hard-boiled egg and "tau kwa", there's also plenty of cabbage and some long beans.
This stall serves decent Nasi Padang as well. Granted that the dishes on the whole may be less "garang" (fierce) in terms of spiciness than my favourite eateries in the Kampong Glam district, but for those times I have a craving and am in the Siglap area, it still manages to hit the spot.
