Just A Burger post to end my Phase 1 of Post-circuit breaker. Love the humble name but this is seriously not just any burger.

The burger is so sinfully good. First off, the the size of this burger is so huge. The meaty wagyu patty, grilled to juicy medium rare, is so thick and full of flavour.

The shots I captured did not do justice to the burger!

An awesome stay home comfort food, NUDE Seafood’s ‘Bouillabaisse’ Seafood Stew ($25.60) was such a treat! Chockfull of seafood-y goodness, it was loaded with tiger prawn, clams, cuttlefish, rouille, watercress, baby corn, desiree potato and a delightful hunk of fish (which i believe is barramundi). The fillet as well as the cuttlefish were tender and fresh-tasting. What I liked most was that the broth was richly textured yet delicately flavoured - getting the natural flavours of the ingredients, both sweet and tangy. The vegetables also provided a nice crunch and the crusty sourdough that came with the stew made the meal more hearty.

This is Nude Seafood vision of the ultimate fish soup. Two premium fishes - threadfin, used in the rich thick collagen broth; and pomfret fish, served as the silky fish slices. Cooked with fried scallops and traditional Teochew accompaniments, it's very tasty, and very healthy. I don't think salt nor msg was added, it's as genuine as it tasted.

This dish is created in honour of Junchen's grandpa. His grandpa sold fish along River Valley Road as a street hawker, before moving into a wet market at the first new town in Singapore, Queenstown. From there, to a small factory in Redhill, before moving to Jurong Fishery Port, where their factory is one of the only two factories within the port area. That's right, his family’s wholesale business is Hai Sia Seafood.

This soup thus spans 3 generations of the Ang family. And for us, we get the best fish in this soup, because Junchen shared with me that he's always the first to pick the best seafood at his family’s seafood wholesale business. And you'll see that his pomfret is indeed more tender, more silky than most around.

There is a fuss-free approach to @nudeseafood’s cuisine. Their location in the business financial district means they’re usually surrounded by customers with plenty of choice. So although this may not be the case at the moment with everyone working from home, #NudeSeafood has stayed true to what they have always been known for when it comes to their Takeaway Menu: Tasty, value-for-money and nutritional meals with their namesake being the dominant protein. That’s why three out of four of the items I chose to try featured seafood.
One was the “Signature Hickory-smoked Salmon” with black forbidden grains and grilled cauliflower ($19.90). The chewiness of the carbs and the taste of the fish were what I liked about this.
Proving really satisfying was the “Grey Mullet Aglio Olio”. It had a large piece of pan-seared grey mullet on a heap of linguine pasta with clams, bacon and broccolini. You can request for the Aglio Olio to be cooked extra spicy you prefer, which is what I did.
The “Fisherman’s Linguine” ($26.80) lived up to its name with tiger prawn, manila clam and cuttlefish showing up to tango with the pasta. Confit tomato coulis contributed a little brightness to the overall.
Representing the land-based protein team was the “Iberico Baby Back Ribs” ($26.90). A gleaming thing in a coffee marmite glaze, the ribs were really decent and the accompanying sides of steak-cut fries and fresh cole slaw were faultless too.

Don’t underestimate how simple looking this dish is. The cashew emulsion was divine, and worked like magic with the roasted broccolini and furikake!

Not really rösti person, but this one got me coming back for seconds, and thirds 😅 love how it is thicker than usual, retaining a crisp exterior consistently throughout its edges, and a soft and soggy centre piece. Truly an amazing stack of potato strips!
