Too bad they don’t sell HK Style Beef brisket noodle anymore.
I ordered their char siew wanton noodle.

The noodles served here are the HK-style egg noodles, tossed in a light sauce. We enjoyed how springy the noodles were! It’s handmade at the shop and I rly do appreciate the effort!! The charsiew was buttery and decently tender, and the crispy edges were especially shiok. The wantons are stuffed with shrimp, which is generous given that other stalls usually don’t add shrimp to their wantons. However, we didn’t really fancy the dumpling & wanton wrappers, which had a slightly strange taste. Would have appreciated some water chestnut in the shrimp dumpling. But overall q impressed, this is a pretty good find at Yishun - the spingy noodles and nicely caramelised charsiew draws us back!

One mouth. That's all it took to taste the effort this stall put into their 𝘄𝗮𝗻𝘁𝗼𝗻 𝗺𝗲𝗲 ($4.50)

Handmade everyday, the noodles carried both a delectable springiness and a nice firm bite. Dressed with delightful chili and dark sauce, it was solid and full of heart.

The wantons also sported silky skin and were generously punctuated with prawn crunchiness. One mouth was all it took to appreciate their sincerity, but I still wolfed everything down rather quickly.

The stall roasts their own char siew instead of getting ready made ones from the supplier.

Sliced in fairly thick chunks, the char siew is reasonably well-roasted with a nice color and charred bits on the exterior. The cut used is rather lean but fortunately not tough and dry.

The highlight is their handmade egg noodle which the stall owner make from scratch at the stall every afternoon. It is rare to find noodle stalls that still make their own noodle yet One Mouth Noodle persist in doing so and that deserves a salute from me.

I guess the result speaks for itself as the thinner than usual mee kia is delightfully springy with a lovely bite. Dressed in a concoction of light soy and fragrant oil, I thoroughly enjoyed this artisanal noodle.
