We though we could scoop up the ice cream with the crisp but it was limp.
If you like gao gao chocolate, this is the dessert for you.

Valentine’s Day is when nearly every restaurant puts out a special menu for couples looking to celebrate the occasion with a meal. I was invited to a preview of the one at Osia at Resorts World Sentosa, a place TH and I have frequented since its opening a few years ago. Below are my thoughts about the 4-course Sharing Menu we had, which will be available from 11th to 17th February.
In line with my impression of Osia, I found the dishes elegant, unfussy but delicious, with a clear focus on honest-to-goodness quality ingredients from the sea and land, prepared in the signature cooking method of grilling.
But before any of the courses arrived, we were first presented with a glass of Moet champagne and the restaurant’s unique stone heart oven-baked flatbread. Freshly-made, ours was seasoned with garlic and butter but it’s also available in three other variants. A cute squeeze tube of smoked eggplant paste (this paste changes every couple of days) and a pat of unsalted butter were the accompaniments.
The actual V-Day menu will start you off with Normandy Oyster dressed in frozen lychee martini, sea water and salicornia, but since the shellfish wasn’t available last night, we enjoyed a sweet compressed rock melon wrapped in Coppa ham with burratina cheese as our appetiser instead.
Next came the Crustaceans course, a platter apportioned for 2 that comprised of Maine Lobster, Norwegian Red King Crab, Skull Island King Prawns—all grilled to smoky perfection—as well as deepfried Soft Shell Crabs. The seafood were big, and they tasted fresh and full of natural sweetness. Alongside were two dips: a Hollandaise plus a sweet and lightly spicy cocktail sauce. Four kinds of Farm Meat starred in the following course. Grilled very nicely, the Black Angus Beef Striploin and Bangalow Sweet Pork were my preferred while TH was full of praises for the Pasture-fed Lamb Saddle. The Milk-fed Veal Tenderloin would appeal to those who like their meat milder in flavour.
To close the meal, a Valhorna Chocolate creation in mousse, ganache and tart form, also served with ice-cream.
Priced at $158++ per pax, the Valentine’s Day Sharing Menu requires a minimum order for 2 pax. Alcohol pairing is available for an additional $88++ each.

You must order this dessert when you're here. It's like a chocolate lava cake, but the molten chocolate within is uber thick and delectable. What came with this is also an ice cream with black pepper, served with sesame crisp.
And this dessert rounds off my lovely dinner here :)
