I finally tried this relatively cheap Michelin-starred brand. Here they used much thinner slices of eggplant ie more batter, so it depends what you like, but I didn't. A lot more floss than other places, but I don't expect less from Putien.

I finally tried this relatively cheap Michelin-starred brand. This may be the best egg spinach I've eaten (not trio egg spinach as I couldn't detect a third egg). The flavour was powerful, served with what's more a sauce than the usual soup.
