Interesting to see what Executive Chef Jean-Charles Dubois and Executive Chinese Chef Andrew Chong served using the same selection of ingredients.

Just look at the mains, Scallops ($42++). Slurping capellini which was a perfect cradle for coconut broth in Singaporean Seafood Laksa. Generously topped with Hokkaido scallops, fried rock lobster and onsen tamago. Or be delighted by the Pan-Seared Atlantic Scallops accompanied by a delicious array of salt-baked red beetroot, baby radishes, crispy capers, and glazed Iranian black lemon beurre blanc.

P.S: indulge in their 2 or 3 Course Set Lunch Menu (updated on a monthly basis) that is available on Mon to Sat at $30++/$38++ respectively. Comes along with a choice of Nespresso Coffee or TWG Tea.

The ice cream with orange ginger coulis was yummy enough to be a dessert on its own. The chocolate creme brulee was like a much-needed chocolate ice cream after a long day if only the thick buttery biscuit underneath was a thin crisp wafer instead. .

Racines' refreshed menu is taking us on a journey that showcases the duality of authentic French and traditional Chinese cuisines. This means that we will be able to enjoy the best of both culinary worlds with ingredients prepared in two distinct styles.

Take the foie gras for example, you can choose between two contrasting foie gras dishes, both at $24++. The French style (second photo) will have it pan-seared with a caramelised fig, so it’s the more classical French foie gras that I’m accustomed to, except that Racines had it served with duck rillettes on a bed of crispy chargrilled sourdough. The Chinese version had it infused with cocoa and Szechuan pepper in what they called the “Mosaic of Foie Gras Terrine” (first photo), offering dry heat to spice up the meal.

And this French-Chinese duality presents itself throughout the menu using other ingredients such as scallops and wagyu. This could also be seen from their newly-designed menu (literally the book) illustrated by local artist William Sim, with French-style food on the lefthand-side pages and Chinese-style food on the righthand-side pages, as it opens through the middle.
