What BTM Mussels call their take on the croque monsieur, I call a bikini sandwich. But whatever you choose to call it won’t change the fact that it’s utterly delicious. The rendition sees black truffle paste, comté, and serrano ham snuggled between 2 slices of generously buttered, well-toasted bread. Just imagine your fave ham & cheese sarnies tszujed up in a fancy-ass, but extremely elegant, black tie suit: this is it. I like how liberal they were with the butter so you get that really moist, browned butter kinda caramelised notes on the toast. Parfait 👌🏻

Curry Mussels and Fries ($36++). Last evening I visited this new restaurant along Duxton, which is serving up good mussels at very affordable prices. These aren't the usual Australian mussels that we are so used to having, these are really good seasonal Bouchot mussels from France and across Continental Europe. 🔸 BTM Mussels is inspired by owner Olivier Bendel’s restaurants at the Léon de Bruxelles group in France, where he has developed 250 recipes for mussels. At Duxton, only seven of the most popular flavours are available at one time. But they're planning to rotate the flavours, so progressively they'll be serving more of the 250 recipes they've developed. 🔸 One of the seven flavours available at the moment is Red Curry. While it has some cream in it, this flavour also included white wine and butter in its mix, and some parsley and onions. It was served with crisp golden French fries, which will also come with any mussels ordered here. 🔸 But there were some other flavours that I like more than this curry mussels. I'll share it with you next time, or you can DM me if you're going soon, and I'll tell you what to order. 🔸 [Tasting] #btmmussels #sgfood #iweeklyfood #whati8today #eatoutsg #sgfoodporn #foodpornsg #sgigfoodies #singaporeinsiders #sgeats #foodsg #singaporefood #burpple #hungrygowhere #instafood_sg #exploresingapore #foodiesg #singaporeinsiders #burpplesg #sgbakery #foodstyling #seafood #jiaklocal #pastry #frenchmussels #sgbrunch #bluemussels #brunchsg #breakfastsg

For 500g Mussels & Fries (save~$35) Get your hands dirty and your bellies filled at this spot on Duxton Hill. You're here for the small but incredibly sweet French Bouchot Mussels ($36 for 500 grams). Have them done Marinieres-style — white wine with butter, parsley and onion. Otherwise, go for the Thailandaises, a satisfyingly spicy rendition with chilli, Kaffir lime leaf, lemongrass, white wine and coconut milk. Photo by Burppler Victoria Hii

For Sweet Crepes and Savoury Galettes By the folks behind Punch and the now-defunct Ronin comes this elegant creperie set in Raffles Arcade Hotel. You're here for a relaxing afternoon with good friends who'll share good food and a nice conversation with you. Start with the savory Salami & Potatoes Galette ($18), where roasted potatoes, brie, an oozy egg and crispy salami make for a lovely dish. Then, move onto a coffee and Crepe with Burnt Caramel and Butter ($16) that is sure to please. Photo by Burppler Nobelle Liew

I would eat this every day if I could I loved their Off The Bone on my first visit, but when the big boss said to try the Salami & Potatoes which is his new favourite...I did, and it’s now my new favourite too. I’m going to skip on describing the texture of the galette cause I’ve raved about it so much I don’t wanna bore you, so onto the fillings. I loved how balanced and earthy this combination was: you’ve got the soft and naturally sweet roasted potatoes, stuffed with brie and a perfectly oozy egg, then topped with slices of crispy, toasted salami carefully folded in a rosette 🥰 It’s great cause the salami + brie combo’s definitely not as salty as the ham + gruyere + cheddar one — not that the latter’s too salty it’s still super delish — so the earthiness of those roasted potatoes really get a chance to shine. And of course we all know how well rich runny yolks go with potatoes 😉

So simple, so elegant, so so good. The thing I really love about Gather, is how they offer simple and fuss-free products, choosing to not over-complicate things and, instead, pay the utmost attention to the little details and quality. You see this literally in every corner of their store: from the interior design, dinnerware, the goods they carry; to the personable service, impeccable coffee and food. . Take their Burnt Caramel crêpe: it’s classic combination of sweet and salty, caramel and butter (no fucking nutella thank god), really simple stuff; but what sets them apart is the quality of the produce and flavours. They use a sparing but sufficient knob of Bordier butter (ie the best butter, quoting Google here it’s not just my opinion), and drizzles just the right amount of burnt caramel for that touch of nutty, slightly bitter sweet element. Every ingredient is perfectly balanced and has a role to play in this dish. It’s just, so elegant.

If I liked what they had to offer during their soft launch, well I’m now completely in love with Lucid. Since their official opening, they’ve switched out their espresso blend to one of a medium-dark roast from Taiwan. I love it, LOVE IT. I’m a big fan of darker roasts and bolder, nuttier flavours; so if I liked their coffee back when they were having a milder, more acidic brew, what more when they’re using beans of a flavour profile I prefer? 🥰 The current blend makes for a delightful iced Strong Black ($5) with a great balance of bitterness and really mild acidity, and of course works wonders in milk-based drinks. I tried their iced Mocha ($6.50) as well, and I’d call that among the best mochas I’ve had in Singapore. It’s not one for the sweet-toothed, focusing on the quality of the coffee and chocolate instead of masking it all up with sugar. The chocolate comes in as a nutty, cocoa kinda earthy sweetness towards the end, complementing and even imho enhancing the flavours of the espresso. Let’s just say I’m now a huge fan.

Newly opened Lucid is one of the new kids on the block in the bustling Lavender vicinity. We were there during the soft launch phase and Lucid will be officially opened in the mid of February, so do check them out for coffee and bakes. •••••••••••••••••••• 📍Lucid 38 Hamilton Road, Singapore 209208

Cloud Beta v0.1 One place that one would not have missed if scrolling through social media over the last few weeks, LUCID is a new space that serves up specialty coffee and cakes at Hamilton Road in the Jalan Besar neighbourhood; the latter sourced from Thoughts Bake. The Cloud Beta v0.1 features elements such as Ivoire Chocolate Mousse, Strawberry Basil filling, and Shortbread base; slicing through the white chocolate mousse layer on the exterior, the mousse was considerably smooth, while the inside reveals a tart filling that gives a refreshing tang from the infusion of basil into the strawberry filling — a very classic combination of flavours, with the shortbread base giving a good buttery crunch. Not the first place to serve up a cloud-shaped cake, but a pretty decent one nonetheless that fits that raw aesthetic of the space

For Luxurious Dessert and Tea Pairings This luxe dessert bar in Great World City is the brainchild of multi-Michelin stars Chef Juan Amador and his protégé, Hüseyin Turan. All desserts can be paired with tea specially curated and blended for each dessert. Choose the refreshing and tangy Moon Walk ($25 for a plated dessert and tea pairing) featuring spongecake, crumble, yogurt, nut butter and coconut. Also good is their non-creamy take on the St Sebastian cheesecake KALEA65. Photo by Burppler Ashley 🤗

Moon Walk From House on the Moon; a new dessert bar which had opened its doors fairly recently at Great World City. Serving up plated desserts at their space at Level 1 of the mall, their space at Level 2 offers the same items available at Level 1 for takeaway. Collaborating with Chef Juan Amador of Michelin-starred Alma by Juan Amador, the Moon Walk (also the signature here) features elements such as Yogurt, Nut Butter and Coconut, and comes with its own tea pairing of a Coconut, Cream Tea. A pretty refreshing dessert, this was a dessert that carried a light flavour profile and a light, tangy note; particular of that from the yogurt elements. Featuring a multitude of textures, the dessert hits the senses all in the right notes; cool and smooth ice-cream, creamy mousse layers, fluffy sponge, crumbles for a buttery crunch while the white chocolate helps to add a crisp, shattering sweetness, this was an item that tickles the taste buds — not too heavy, yet very well-designed to give just that right contrast and balance in terms of texture. Hoping to see the folks behind House on the Moon come up with more plated desserts — a very rare destination within a shopping mall, and a spot I will gladly make a trip down to Great World City for an accessible experience almost akin to that of fine-dining, be it in terms of presentation of food and its service.
