The NEW Summer Menu by Executive Chef Kirk Is Really Quite Spectacular H O S T E D Believe it or not, this was my first time dining at One MICHELIN Starred “Jaan by Kirk”. My friend Annette and I were seated a corner table and had our eyes treated to jaw-dropping views from this up-in-the-sky restaurant as we partook of the new Summer Menu for lunch. Solidified around the concept of #ReinventingBritish, Executive Chef Kirk’s food has a major case of acute tastiness which I should warn you, can trigger heart palpitations right off the bat. I felt it myself, particularly with the “fish and chips” and Devonshire cheddar buckwheat pancake, two of the four exquisite snacks that flagged off our meal. Sourcing wherever possible from his place of birth - Devonshire, England, Chef Kirk’s culinary creations are as imaginative, beautifully articulated and satisfying as the best stories. Each course had an opening that drew me in and content that had me transfixed till the end. Which was what happened with the Roast Potato Soup served with a Mini Loaf, the Summer Beans Salad - a texturally-fun fest of different beans, English peas, Prosciutto ham, quinoa and parmesan cream prettied up by flowers from Jaan’s garden on level 5 of the Swissotel Stamford Hotel, and again, with the irrepressibly bouncy-of-flesh Scottish Langoustine tempered by a Baby Courgette. Just as enthralling to me were the poached snapper in a English pea and mussel sauce, and the smoky Wagyu the team had substituted the original stated course of Salt Marsh Lamb Loin for. I did sneak a bite of the Shepherd’s Pie, the second half of that from Annette and thought it was really good, not at all gamey. The picturesque palate cleanser with its mini bottle of cherry liqueur was inspired by picnics in the park. I loved how it dazzled with refreshing brightness from different sorbets and citrus-based elements. As for the strawberry dessert, I was so well and truly charmed I plan to devote a post to it.

@jaansg , Singapore French Fine Dining, served British-inspired menu by @chefkirk_w , Simple Yet Complex, is not just beautiful dishes, but also reflect both culinary tradition and creativity. Feature the signature dish by @jaansg , Eggs in an egg. A confit of organic egg yolk served with cauliflower custard and pickled shimeji mushrooms and tops it with caviar. afternoon tea within a garden 🌺🍵 $38 per set // hidden within the lush flower dome of gardens by the bay lies fennel cafe, where i had an enjoyable tea time!! this set came with about 5 bite-sized savory and sweet items of a mediterranean-french theme, so each item was of unique flavors and not your typical afternoon tea menu. all of the items were scrumptious and some of the items i enjoyed more due to its uniqueness were the mushroom croquette, red pepper hummus and sourdough chips, spiced creme catalan tart and citrus dark chocolate scone. due to each item being bite sized, i got to enjoy a wide variety of flavors without being too full, which left me feeling just right to go explore the flower dome after my meal!! you’re entitled to enter the flower dome with the afternoon tea set so that made my meal more worth it!! the quality and taste of the food definitely matched up to the great garden themed dining experience i had, and i’d sure to come back for more if they offer new seasonal menus 🌸🌸

Afternoon Tea Part 5 ($38 Per Pax) This afternoon tea set only offered 1 cup of tea or coffee. If you wish for free flow, must add $5. I had this set a few months ago so the items may have changed. Initially I was seated upstairs right next to the Flower Dome (complimentary entrance if dine at Pollen). But the roof was glass and the sun was super hot. Yes the ambience was great and the view superb, but I started sweating even before my food came. In the end, I requested to be seated downstairs. Air con!!!

Afternoon Tea Part 4 ($38 Per Pax) Sweets platter: 1. Mojito choux 2. Macaron of the day 3. Rosemary honey choc cake 4. Raspberry and rose tart 5. Cranberry and pistachio financier All were quite sweet but tasted good. Very small.

Đếch Phải Là 3 Sao Đánh chén tại Les Amis luôn là một niềm vui. Nhưng bạn này chắc chắn không phải là 3 sao, không phải khi so sánh với các đồng nghiệp bên Pháp. Thậm chí so với nhà hàng 3 sao khác ở Singapore, Odette - ít sáng tạo và đáng nhớ hơn. Danh sách rượu vang tuyệt vời. Trái lại, bảng phô mai khá nhợt nhạt. Món tráng miệng mille feuilles sụp đổ sau 5 phút. Tuy nhiên, hãy không nên quá khó tính, và nên biết ơn bất cứ khi nào chúng ta có cơ hội đến xực ở đây.

Delish pre-dessert Choc (part of $175++ menu) Dining at Les Amis is always a pleasure. The cooking and service do improve with time. But it certainly is not 3-star, not when compared to its colleagues in France. Even relative to the other 3-star in Singapore, Odette, the whole experience is less memorable - less innovative and fewer wow dishes. Amazing wine list. The cheese board pales next to the 3-level cheese trolley at Le Grand Véfour in Paris.) The mille feuilles dessert collapsed after 5 minutes. However, let’s not nitpick and be grateful whenever we have the opportunity to come here.

For French Food This little labour of love has been run by Johnny and Lisa for close to 7 years now, and it’s been consistently satisfying. The 3-course set lunch is good value at $34 (+$10 for the red wine braised angus beef cheeks). Their French Onion soup is $16 but it’s the sort of thing you want on a cold rainy day.

House Cured Salmon (Starter) House-cured salmon, topped with fresh chopped dill, Apple salad and walnut. One of the house specials, and only available when they have fresh salmon. The crunch, the refreshing flavours of both the sea and the land, certainly put anyone into a smile. And we need to talk about the darn vibrantly coloured house-cured salmon. Doesn't smell age old, or look like one, and using the fattiest part of the salmon, that fat-meat combo is quite delightful. This is definitely the one place, to be for French food. The owners are Husband and Wife combo, and the setting is very casual, intimate and small. Don't expect fancy French food, but rather very wholesome and authentic cuisine.

Catch Of The Day Catch of the day (2-course; $30) Very well done pan-seared barramundi, on top of roasted baby potatoes and ratatouille, and pesto sauce. The skin, is fried to perfection, til the end the skin is nice crisp. You can hear the crisp sound when putting the knife through. The fish, fresh and firm. It's flaky and very moist. That ratatouille is heavenly with good seasoning, and sweetness comes through. Looked like a heavy dish, but well paired with good texture, light but distinct sauces. The pesto sauce isn't heavy at all, light and compliments the overall meal. French done right!

Valentine Day Experience A beautiful venue that takes you back to the streets of Paris... here you can expect a high level service, and our expectations were high for this special occasion. The venue had a special Valentine 3-course menu priced at $118++ per person that gave you a selection of one for each course. For appetizers, the winner was the Salmon tartare (pictured), as it was well seasoned and generous. We would have ordered the oysters if we were fans (as most other diners did), but decided to try the duck liver dish which was decently good. For main course, we felt that the Salted Cod Loin was on point and our favourite dish of the night, as we had that "eye rolling" effect on many occasions. The same thing can be said for our other main course when we dipped the Ribeye steak served with fries in the awesome Béarnaise sauce. By that point we were too stuffed and weren't exactly blown away by the desserts as a result. We tried the Crepe Suzette that was flambé on our table which was the best part, and the berry pavlova was nice but slightly too sweet. Overall we left feeling satisfied with the quality of the food but definitely felt that it was pricey for sure. One to consider if you would like to give yourself a treat.

; Seafood Vol-Au-Vent All eyes on this handsome housemade flakey puff pastry that's barely able to contain those succulent scallops, lobsters and other fruits of the sea. As if that weren't mouthwatering enough, they are doused in a luxurious bath of seafood-jus bechamel. Orange Blossom Chocolate Cake (SGD $10) @ FrapasBar. This can almost pass for a festive dessert. . While the moist, soft, chocolate fudge coated chocolate sponge cake has deep chocolatey bitter sweet flavour, the star is the fresh slice of juicy crunchy orange brulee / caramelised orange on top, which bursts with fruity sweet flavour. . Paired with thick orange gel with sharp sour sweet citrus flavour, and crumbly butter biscuits with buttery grainy sweet flavour. . Completed with soft mint leaves with sharp minty herbal flavour, and a creamy smooth scoop of vanilla ice cream with floral earthy sweet flavour. . . . The seafood within is fresh with sweet savoury flavour, and includes plump blue mussels, bouncy squid, flaky tender sea bass fish fillets, and a single juicy succulent tiger prawn. . Octopus Leg (SGD $15) @ FrapasBar. This was served in a rich, thick tomato and pimento puree with deep vegetal sweet herbal flavour, alongside bright mesclun salad (baby spinach, chard, mizuna) with fresh vegetal bitter sweet herbal flavour. . The octopus leg has a lovely smoky aroma, with good sweet salty savoury flavour, but the texture is a little softer and less bouncy than what I'm used to. . Still, it's pretty good. . . .
