Sophia鈥檚 Risotto ($24) Often when there is an attempt to evolve the traditional fare, be it by upscaling it or infusing it with other existent concepts in cuisine, a grey area forms. Therein lies the risk where a concept can become dismissible without care, which was one that FrapasBar took boldly with its re-imagined French tapas selection and profound risottos. - 馃搷THE PLACE Located just along the seams of The Cathay where the original Saveur used to be, a centerstage bar display, dim lighting and black marble tabletops make for a casual evening dinner with a flair - 馃嵔 THE FOOD 1锔忊儯 Sophia鈥檚 Risotto ($24) - I gotta tell you, when two of my favourite things to eat in the world coalesce, I might just fall prey to the old biased routine that judges simply based on whether its a standalone winner or a complete fucking disaster. In the case of Sophia鈥檚 Risotto combing otah-otah and risotto along with generous chunks of crab meat and mackerel, I鈥檓 proud to qualify it in the former category 2锔忊儯 Saveur Pasta ($9) - for a namesake dish hiding comfortably in the corners of the menu, this minimal serving of dry capellini wasn鈥檛 exactly a contender for a signature 3锔忊儯 Seafood Bouillabaisse ($16) - traditionalist fare made compact might have some setbacks, just saying 4锔忊儯 Salmon Tartare ($9) - this classic combination of salmon and avocado was made surprising with the addition of pickled ginger and honey - 馃 THE VERDICT The tapas are not an essential order despite the place having 鈥淭apas鈥 in its name, but do come here for the Sophia鈥檚 Risotto.
Strawberry Confit Crumble $10 Wouldn't have gotten this if I hadn't notice the basil panna cotta within the dish. Sadly the panna cotta was a little harder than expected. Crumble was like digestive cookies, and strawberry confit was just.. strawberries. Would recommend skipping desserts here given the many options for desserts nearby.
Pumpkin Risotto $20 I guess because the rest of the dishes fared quite well this risotto kind of paled in comparison, lacking somewhat in flavours and dimensions. But it was a super generous portion, about two times what you'll get at a posh Italian restaurant, for those looking to fill up with carbs.

Garden Fine Dining Experience Part of the previous Corner House degustation, landes white asparagus is one of the most intriguing courses for me. Icy yuzu sorbet that pairs with marine lobster and kristal caviar that brings out the freshness of the seafood. Simultaneously, these are enhanced by the mild spiciness from green cocnut laksa gravy. It was a dish that is beautifully decorated to showcase the botanica theme.
The 鈥淐evenne Onion鈥 that changed Chef Jason鈥檚 life. This was the highlight of our 7-course (that totalled up to countless items) dinner at @cornerhousesg that wow-ed us item after item. The complete 4-part to 鈥淭he Onion Revealed鈥 comprised the baked onion cup, onion tart, onion chip and an onion tea. This onion cup in its most natural form, was baked and filled with onion pur茅e and confit, with a sous-vide egg and shaved black truffles. The result was a comforting taste of satisfaction to the senses. The tart and chips topped up the experience with different tastes and textures; before a cup of onion tea. Simple as it looked, but the small tea-cup held an emulsion of onion and cream, made from 3kg of onions and 2days鈥 work to produce a mere 200ml. We felt delighted and proud as we savoured this exquisite creation and many of Chef Jason鈥檚 other amazing dishes during our memorable dinner in the most beautiful restaurant with the best services.

Good Souffl茅s I have been wanting to try this restaurant in ages. Glad we made it for dinner. The souffl茅s are absolutely delish especially the desert orange souffl茅 with Grand Marnier. My daughter had boeuf bourguignon served with a mini comte souffl茅. Son had duck confit with truffle mushroom mini souffl茅. Hubby had a tasting flight of 3 souffles. Laksa Souffl茅 ($23) and Grand Marnier et Orange Confites ($23). Most of us probably haven't tried savoury souffl茅s, so if you're keen to try some, head to Souffl茅 nestled at Duxton Hill for a choice of six sweet and five savoury souffl茅 varieties. I just found out that both sweet and savoury souffles are classic to French, and Souffl茅 is Singapore's first and only restaurant dedicated to this. 馃敻 Their souffl茅 are served as appetizers, mains and desserts. For appetizers, I'll recommended the laksa Souffl茅, for a taste of Singapore flavours made with fresh prawns and a laksa sauce, over ethereally-light souffl茅. 馃敻 It can be a bit tricky to pick a good main course here, as some dishes can go very wrong.
