Seng's Wanton Noodles (Dunman Food Centre)

This is my parents' favourite wanton mee, and they go here so frequently that the auntie and uncle recognise all of us. I loved the egg noodles- not overcooked and really shining in the black sauce! I don't eat spicy stuff, but my parents always take their wanton mee white, with their chilli, because they say that's how you can taste the true flavour of the noodles. Also, do yourself a favour and order the lovely crispy wantons, it's worth it!

Tip for ordering: Dash to the stall and get a number placeholder first! Then sit down and wait for your number to be called. Only after it reaches your number, then place your order at the store!

As far as wonton mee goes, it's fairly difficult to find a stall that is able to perfect every single component of the dish. Seng's Wonton Mee's distinctive feature is its springy noodle reminiscent of capellini prepared al dente. The noodles when mixed and stirred with the chilli is not overtly spicy, avoiding the cardinal sin of having the sauce overpower the entire plate. The surprise of the dish came in the form of the supremely tasty and hearty broth, a component often neglected and overlooked by most stalls. Maybe it could have been the MSG, but the soup with a perfect blend of shrimp and pork fragrance was in a league of its own. Sadly, the slivers of char siew were fairly limp and damp, unlike the roasted and crispy one that I have come to associate with this dish.
