❉❉ 2 Michelin Star Shisen Hanten by Chen Kentaro is the product of a proud culinary legacy that began with the founding of Japan’s first Szechwan restaurant in 1958 by Chen Kenmin, regarded as the “Father of Szechwan cuisine in Japan.” Carrying on the family tradition is his eldest son, Chen Kenichi, nicknamed the “Szechwan Sage” and acclaimed as one of Japan’s most celebrated Iron Chefs. Shisen Hanten by Chen Kentaro is the brand’s first foray outside of Japan, helmed by third-generation Chen Kentaro. Himself a rising culinary star in Japan, Chef Kentaro meticulously articulates his mastery of Szechwan cuisine through creative menus that incorporate the freshest of seasonal ingredients to celebrate the signature flavours of Shisen Hanten. The most popular item on the menu is Chen’s Mapo Doufu, an original Chen family recipe using doubanjiang (chilli broad bean paste) that is fermented over three years. The end result is an extraordinarily soft and silky tofu dish that is best enjoyed when deliciously paired with a bowl of fragrant Hokkaido rice. Other must-try dishes are Chen’s Original Spicy Noodle Soup; Stewed Fish Fillet in Super Spicy Szechwan Pepper Sauce; and Sautéed Szechwan Chilli Pepper and Chicken.

Coated with a thin layer of Hokkaido potato flour before deep frying, this 辣子鸡 was hella addictive! Boasting a crunch, this made for a good snack to have while waiting for your main dishes to arrive. My only qualm was the spice, would have preferred if they were sweat inducing but hey, I guess this helps to maintain my glam at a restaurant 😂✨

Of course, as with all restaurants, there are hits and misses. The Char Siew here were largely forgettable, though their sio bak here were pretty decent. I’d give this dish a miss if I patronise them again.

$13 now since @mandarinorchard is offering 50% off their entire menu. Undoubtedly the star of the meal and I regret not plating it 🥺.
The tofu was dreamily velvety, and acted as a perfect conduit for the stock. Boiii, the moment my tongue was caressed by the silken chunks — fragrance galore 😩.
Its fragrance was indulgently intense and, despite deep crimson hues🌶️, spiciness was more of a gratifyingly-controlled numbness that creeps in post reveling in its vivid umami. It wasn't heavy-handed or distracting, for someone who's not a fan of "make everything spicy af" culture.👏🏻👏🏻👏🏻

My fav of course the chef's mapo dofu, beside tasty, its delicate, with numbness that not overwhelming, and pair with warm rice 😋. My son fav will be sweet and sour fried kurobota pork in black vinegar.
The pork was tender and flavourful.

2-MICHELIN Starred Shisen Hanten by Chen Kentaro is most renowned for a dish named “Chen’s Mapo Tofu”. It is their version of the Sichuan signature, a messy looking thing of soft silky beancurd in spicy minced pork sauce. Having eaten the dish at various eateries, my view is that their formula reigns supreme with its intense fragrance, unapologetic spiciness and desirable degree of numbing effect. One whiff is capable of triggering my salivary glands into overdrive.
