Shisen Hanten by Chen Kentaro is the product of a proud culinary legacy that began with the founding of Japan’s first Szechwan restaurant in 1958 by Chen Kenmin, regarded as the “Father of Szechwan cuisine in Japan.” Carrying on the family tradition is his eldest son, Chen Kenichi, nicknamed the “Szechwan Sage” and acclaimed as one of Japan’s most celebrated Iron Chefs. Shisen Hanten by Chen Kentaro is the brand’s first foray outside of Japan, helmed by third-generation Chen Kentaro. Himself a rising culinary star in Japan, Chef Kentaro meticulously articulates his mastery of Szechwan cuisine through creative menus that incorporate the freshest of seasonal ingredients to celebrate the signature flavours of Shisen Hanten. The most popular item on the menu is Chen’s Mapo Doufu, an original Chen family recipe using doubanjiang (chilli broad bean paste) that is fermented over three years. The end result is an extraordinarily soft and silky tofu dish that is best enjoyed when deliciously paired with a bowl of fragrant Hokkaido rice. Other must-try dishes are Chen’s Original Spicy Noodle Soup; Stewed Fish Fillet in Super Spicy Szechwan Pepper Sauce; and Sautéed Szechwan Chilli Pepper and Chicken.

Not Szechwan (or Szechuan) by any stretch of imagination but I liked this a lot: Sautéed “nai bai” (or whatever vegetable is in season) with two kinds of chunkily-cut mushrooms and finished with a splash of truffle oil. I felt the amount of truffle fragrance was calculated just right as it heightened the earthiness of the mushrooms but didn’t overwhelm the dish.
At $26++, this isn’t cheap but I think it‘s worth every cent just based on how tasty it is.

With an ideal ratio of soft, silky soya beancurd to minced pork, and a very fragrant Szechuan pepper-packed sauce that’s sufficiently fiery, I dare say this is the best “mapo tofu” I‘ve ever had.
Coupled with the stellar service, this is one restaurant I can’t wait to return to. With more people in tow so we can order loads of dishes to try.

The food is also pretty bomb with the Mapo Doufu being their most popular dish. An original Chen family recipe using doubanjiang (chilli broad bean paste), its perfect with a bowl of premium Hokkaido rice, the contrast of the fiery red and orange hues from the tofu and the pearl snow white rice being strangely satisfying.

Despite it having a decent amount of spice, the heat is surprisingly not intense as it looks.

Perfectly escapulating their two Michelin stars, Shisen Hanten's Foie gras chawamushi served with crab and crab roe sauce is to die for.

Eggs like silk punctuated with the distinct bursts of flavor from the crab meat and richness of the roe, each greedy spoonful was akin to having liquid gold.

Some people order this to share, do yourself a favor; don't.

This dish is served at the 2 starred Shisen Hanten restaurant along Singapore's Orchard Road.

A nice rendition of a classic wok fry jazzed up with black truffle. Very well cooked prawns which are bouncy and tender. The light fragrance of the black truffle perfumes this dish and invigorated the lightly cooked vegetables. A good dish.

I like Szechuan food for its strong flavours and numbing spice. Even though Shisen Hanten tends to tune down its spice levels, this dan dan noodles hits the right spot for me. It's rather strong and definitely numbing, with some sweetness from the minced pork.

Pretty expensive for a sweet and sour pork dish but this is a 2 Michelin Star restaurant. We enjoyed this dish but found it slightly underwhelming considering it was a signature item. The black vinegar was superb and added great depth and flavour that lifts this dish above most normal versions. However, the fried pork cubes were a touch soggy and we didn't love the fine diced peppers that garnished the dish. Overall we think there were stronger dishes at Shisen Hanten than this.

Brought the family here for a celebration and we totally enjoyed this dish from Shisen Hanten; you can really tell when you eat nice peking ducks vs the mediocre ones. Also, half a duck costs about $40. We loved the delish amalgamation of the crisp duck skin, cucumber and the delightful sauce in the pancake. A must-try. ♡

Good level of heat - milder than the famous Mapo Doufu, but still packs a punch. Eggplants are not soggy (great texture). Sauce goes great with Hokkaido steamed rice - which you must also pair the Mapo Doufu with, too! MUST!!!! 🍚

We ordered this not by popular demand but because there was someone present at the table that is a very fussy eater. Portion seems oddly small, so I didn't eat this. (I don't fancy fried food in the first place)

Of course I had to try the signature dish: [O1] Chen’s Mapo Tofu 陳麻婆豆腐 / 四川飯店伝統のマーボードーフ ($24++/portion).

You definitely need to pair this with a bowl of fragrant steamed Hokkaido white rice 🍚 to enjoy it, because it is too salty to eat on its own (trust me). I don't eat spicy food often - I was sweating by the end of this! But glad that I tried this as it is not something I eat often, so I'd want nothing but the best.
