CNY lunch at Silk Road Restaurant at Amara Hotel. Disappointing to know that the Entertainer App couldn't be used, as is their rule during all 15 days of Chinese New Year, apparently.

I have no issues with rules, but these need to be clearly stated in the app... & it wasn't. That's a huge pet peeve of mine.

The booking wasn't under my name, & neither am I the one with the Entertainer App. Even though I'm not going to go on a huge rant about this, let's just say I do feel the pinch in my wallet having to pay full price for this meal that didn't even fill half of my stomach.

While Amara Singapore is still serving the classics for CNY this year, those with a more adventurous palate can opt for their mala series that includes Chuan Xiang Mala Treasure Pot, Sichuan Mala Yusheng, Roast Chicken with Sichuan Mala Sauce, and this Grilled Red Garoupa with Mala Sauce.
🔸
What I like about Amara Singapore's mala dishes is that they have spice level thoughtfully tuned for each dish. While the pencai has its spice level tuned down to suit the whole family, and the mala roast chicken with the option to the mala sauce served on the side, this fish will give you the full blast of mala spices to satisfy the cravings of those who need really spicy food (like me).
🔸
Besides their Mala series, Amara Singapore will also be serving a plethora of classic delicacies including traditional crowd favourites, such as the Prosperity Eight Treasures Yusheng and Claypot Rice. A special Lunar New Year Eve set is available ‪on 24 Jan‬ from $688++ for a table of 10 pax, or $388++ per table of 5 pax. Other CNY menu and ala carte menu is available ‪from 25 Jan to 8 Feb.‬

.
Also known as Laziji / Spicy Chicken Cubes.
.
These are medium spicy, with a sharp numbing burn, that lingers a short while.
.
The chicken cubes are crisp, with good savoury salty spicy flavour. Nice, would order again, and pair with beer.

Invited tasting.

Essentially your usual saliva chicken concept, but with the limp and flaccid fair-skinned bird substituted with one that has its fair share of Box Office Fitness training (@boxofficefitness) and much Vitamin D. 4.1/5

My favorite dish of the 7 course dinner set. It's really having fried garoupa in chili crab sauce with a tinge of Sichuan mala. Sets are priced at $58/ $78 per pax. A really good place to bring your big families to. Very comfortable setting.
