Turn the heat up on a decadent dinner at SKIRT at W Singapore – Sentosa Cove, a trailblazing steakhouse, where prime cuts of meat and fresh seafood are beautifully prepared on the centrepiece parilla grill. Three culinary rules of sourcing only the finest sustainable ingredients, simple yet skillful preparations featuring the South American asador technique and an inherent respect for nature are embodied in SKIRT’s raw organic design, featuring a hanging glass horn installation, leather chandeliers, chopping blocks suspended on chains, a marble countertop in the open kitchen, wooden panels and leather trimmings framing the grill, and floral-handled brass cutlery. The dinner experience at one of Sentosa’s best restaurants is inherent in each detail characterising the chef’s collaborative ethos of technique and ingredients, beginning from the butterflies on the reception stand to lighting and wood panels that complement the sensational aromas emanating from the grill.

And I thought it's Saturday tomorrow, so I was all ready to go down to Skirt for their lunch menu only available on Saturdays.
I had this dessert during my previous Saturday lunch visit, and it's very much like the Golden Gaytime ice cream I had in Australia. Dolce de leche ice cream with dark chocolate, served with honey comb on a bed of nuts.

Thin crisp flaky pastry filled with pistachio and banana fragrance, with vanilla ice cream providing a nice temperature contrast. Let it melt and mix it up, absolutely delightful.


Back to Skirt again, this time for their wagyu burger. When everywhere in town is crazy noisy and crowded, I head to W at Sentosa for my weekend respite.
Skirt @theboldestgrill's wagyu burger came with fried egg, lots of baconc and vintage cheddar smeared with sesame aioli, all these sandwiched between their soft fluffy potato bun.
It's only available on Saturday lunch though, and I'm expecting myself to be back again on more Saturday afternoons.


[23/24 Nov only] Familiar tastes in unexplored territory.

I had the privilege of having Chef Mads Refslund degustation menu exclusive to SKIRT.

As a champion of New Nordic cuisine, Chef Refslund’s influence is definitely evident over the 10-course menu. Though the menu didn’t exhibit the spoils of Nordic countries, it definitely exemplified the purity and freshness of ingredients, a sure requisite for New Nordic cuisine.

I enjoyed how for each dish, the elements were distinct but they fused well together. For example, the first main, the sweetness from the banana slices was balanced by the saltiness of the caviar clumps and enriched by the umami of roasted seaweed. It was a case of how in most marriages, opposites attract.

What I loved most from the menu, was the seafood and how Chef Refslund brought out its sweetness: a paste of oyster and parsley, hamachi with black radish, sweet shrimp with salted plums, buttery king crab with rosemary. These were a few of my favourite things.

I’m so glad to have tasted a sliver of New Nordic cuisine and I can’t wait to try more.
