You either love or hate tripe. And if you love, you tend to love it hard. Like I do this Cassoulet of “Trippa Alla Romana” ($29++) at @spagosingapore.
It’s not just that the pieces of tripe are always perfectly jiggly-soft and tender but the thick, spiced-up tomato sauce they are cooked in, which is thickened with burrata, is extremely appetising. Love that the dish is served with mini grilled baguettes too because it is criminal to not mop up every bit of that sauce.

The 2nd half of the duo of tartare: hamachi with avocado on a cracker. One of my favorite courses in the chef's menu in spago singapore. The sashimi is well marinated with a burst of citrus and savoury flavours that goes with the hamachi's fresh and sweetness.

Deep fried crispy spring roll of laksa noodle.
Miso Broiled Ora King Salmon served with Hijiki Seaweed rice,Ikura and Japanese Pickles.
The Salmon cooked perfectly and flavourful, the rice,ikura and Pickles compliment the salmon very well.
Tarte Au Chocolate (+$10).
The base tarte quite hard, the filling was rich,silky and chocolaty.

Spago 's chef tasting menu comprises of 8 courses, inclusive of desserts which you can choose from the dessert menu. Pictured is one half of the duo tartare which comprises of big eye tuna, miso and sesame. This is one of my favourites from the menu: the combination of sweetness and nuttiness from the sesame cracker cone that has a crispy texture, filled with fresh tuna sashimi that is marinated in a savoury sauce, topped with bonito flakes.

At $49++ (weekday) / $59++ (weekend) for 3 course lunch, you are getting a great value for your buck's worth. We had the big eye tuna tartare and oysters for starters. Both were impressive. For mains, the duck was too small a portion for me but glad the hub ordered the wagyu burger and the fries were exceptional. For desserts, I asked for a customised sorbet plate because I don't take cheese. Everything was so fabulous, we are definitely going to be back.

Amazingly well priced set menu with incredible choices at only $65!! For a celebrity chef I would have expected the price to be much more. The 'laksa' was the star dish for me as the noodles were a dry laksa but then the broth is poured around the dish enhancing the noodles themselves. I expected the eggplant salad to be more like a salad and not half an eggplant as is, but stick form falafel was a new and fun way to eat it! The kaya in the foie gras was more buttery than sweet which works better. Lastly the brownies were so good but I couldn't finish it as I was so full! Bonus: the cocktails were amazing and huge!! Worth the money. The waitstaff were so knowledgeable and helpful, they clearly know what they're talking about.
