$22++ for a single serving of cod may sound like a lot but what a catch it turned out to be. Served as a single big, boneless chunk, it could be shared between two persons. And the taste was so fresh even my dad who’s Teochew and very particular about fish, had only praises. It was steamed with sliced shiitake mushroom, red dates and dried lily buds in a light soya sauce, so the natural flavour of the cod was not overshadowed. Timing of the cooking was precise, resulting in the cod’s moist, naturally oily flesh coming off in mouthwatering chunks when I applied pressure with my chopsticks.

If I am not mistaken, these “Squid Ink and Seafood Dumplings” are part of the Spring “dim sum” specials. Your teeth don’t get blackened as the ink is used in the very thin, soft skin of the dumpling. The generous and tasty filling is a mix of seafood that includes crab meat. Highly recommended.

Located within the Regent Hotel Singapore, this was one of the best Chinese vegetarian dishes we have had. The center of the yam ring is filled with perfectly fried eggplant and the sweet and sour sauce is balanced and very flavorful. The ring itself is fluffy inside, crisp outside and almost perfect. A very good dish.
