The fine seasonal omakase menu combines longstanding respect for heritage and tradition, with inspired innovation to showcase the finest ingredients!

All in all, we were most impressed with the quality of food we savoured, as well as the attentive + friendly service. I must say Chef Taiga’s nigiri sushi were a notch above the rest in the list of omakase restaurants I tried so far.

In Chef Taiga’s signature auction-grade Uni Handroll, two types of premium seasonal sea urchin are generously topped on rice and cradled by A-grade jet black nori sheets. Seriously, DA BEST I ever had! Your date💕 will definitely be so impressed…

For the complete Taiga experience, there’s a discerning sake list curated to pair perfectly with your omakase. Each one has been carefully selected by Taiga’s in-house Sake Sommelier to bring you on a sake adventure, off the beaten path.

Discover with me the secrets hidden behind the art wall at @conradsingaporeorchard ! Helmed by Master Chef Taiga Kanekuni, this highly anticipated restaurant serves up exquisite omakase menus that are a feast for all the senses.

Chef Taiga's shokunin kishitsu is evident in every dish he creates. Using only the finest ingredients sourced from Kōchi Prefecture, Chef Taiga takes great pride in sharing the unique flavours of the region.

Taiga Dining offers two omakase menu options for lunch and dinner, with each menu comprising a selection of artistic appetizers, nigiri sushi, miso soup, and dessert. Standout dishes include Chef Taiga's signature seasonal dishes such as Pickled Fatty Tuna in house-blended Soy Sauce, Simmered Kuro Awabi (Abalone) served with Abalone Liver Sauce, and his signature auction-grade Uni Handroll.

But Taiga Dining is not just about the food - the restaurant's design is also a feast for the senses. We entered through a hidden doorway into a hallway that mimics the rockscape of Kōchi Prefecture before ascending through a narrow crevice in the mountain to reveal the 13-seater sushi counter at the heart of the cave. Finishes within the space have been carefully selected to engage the senses, and an intuitive Barisol lighting system brings a luminous atmosphere that subtly shifts the mood from day to night.

To round up your experience, Taiga Dining also boasts a discerning sake list curated to pair perfectly with Chef Taiga's menu. From fruity to savory and everything in between, there's a sake pairing for every omakase set, including a fine sake range that includes a comprehensive Juyondai series, a Zankyo Super 7 from the Miyaga region made from rice polished to 7%, and the much sought-after Niizawa Reikyo Absolute Zero.

In short, Taiga Dining offers an extraordinary dining experience that combines exceptional food, stunning design, and exceptional sake - all served up with Chef Taiga's shokunin kishitsu spirit. Don't miss out on this unforgettable culinary adventure!
