Read about this new stall and since it is close by, decided to give it a try. Not the easiest since they are closed in weekends.

Their “不见天” char siew is half fatty and half lean. Meat is tender and succulent but not as sweet as what I am used to. When dipped into their sour chilli sauce or accompanied by their sambal chilli sauce, it immediately escalates the flavour of the char siew. As for the roasted pork belly, portion is a bit small but the crackling is so crispy!

Definitely coming back for more!

The signature char siew was super fatty(also because I got the full fats cut.) It may be a little jelak for some but fret not, you can always opt for the half fats and half meat (半肥瘦) version too

Came across Te Bak Kia Roasted 猪肉仔烧腊 on social media — a new establishment which had recently moved into a stall at Ayer Rajah Food Centre; the opening hours being a tad off considering it is only open during weekday mornings to afternoons, but it was the meats that got us making the effort there to give them a try.

Trying all of the meats that they have to offer, the 3 Combo Rice comes with Roast Pork, Roast Duck and Char Siew. The star here is undoubtedly the Char Siew — using the cut around the armpit area of the pig (also known as 不见天), the char siew everything that we yearned for — melt-in-the-mouth tender, yet with a juicy bite; all without being particularly gelatinous nor too fatty, whilst glistening with a thick and sufficiently sweet sauce being drenched all over that also helps to flavour up the rice. The Roasted Pork also matched up well against the stellar Char Siew; again, a good proportion of fatty and lean parts that comes with a juicy bite without being particularly gelatinous — sufficiently savoury whilst coming with a crisp skin over the top. Roast Duck was decent; whilst some may expect a crisp skin with a layer of fat in between the skin and meat, the Roast Duck here instead focuses on the leaner parts — again, sufficiently savoury but still incredibly succulent without being grainy or fibrous. The only qualm was how the meat was sliced a bit too thinly for my liking; would appreciate thicker cuts that allows one to enjoy the textures considering how good the meats were.

Ayer Rajah Food Centre is not exactly the easiest place to go for some — a food centre that is located at the fringe of Pandan Industrial Estate at one of the ends of West Coast. The operating hours of the stall also seem to suggest that they cater pretty much to the working and marketing crowd from the area, being only open on Monday to Friday from 9am to 2pm. That being said, this is a stall worth making the visit for, especially for their stellar Char Siew and accompanying sauce which is pretty satisfying indeed!

The 不见天 Charsiew is nicely caramelised. Highly recommended!
